METHODS
Methods of making coffee are as follows
• Instant Method
• Saucepan or Jug Method
• La Cafetière
• Percolator Method
• Vacuum Infusion Method (Cona)

• Turkish Method
1. Instant Method –
It is the quick and simple method of making
coffee. Ground coffee is mix with hot water. This
coffee can be prepared just before the serving by
pouring boiled hot water over grounded coffee
powder which dissolve instantly. It can be served
with milk and sugar separately.
This method is suitable for making coffee in small
and large quantities.
2. Sauce Pan or Jug Method –
This method is useful for making small and
large quantity of coffee. Take a measured
quantity of ground coffee in a saucepan or jug
and add freshly boiled water and cover with a
lid. Allow few minutes for infusion and then
strain into serving cup. Can be serve with hot or
cold milk with sugar offered separately.
3. La Cafetière Method -
• This equipment is also called as French Press.
• Simple and suitable method for making coffee in
small quantity.
• It is a glass container with a lip and lid with a
plunger which is adjusted to a lid.
• Measured amount of coffee is placed and freshly
boiled water is added over coffee.
• Stirr and cover with a lid to allow infusion.
• The bottom of plunger has a fine wire mesh
strainer so that coffee granules will be strained.
• Before serving plunger is pushed down the
glass.
4. Percolator Method –
• It consists of a pot with a small chamber at its
bottom, close to a heat source. A vertical tube
connects the bottom chamber with top of the
percolator where a measured quantity of ground
coffee is placed on the filter.
• Water is poured up to water mark level into the
chamber and then equipment heated electrically
put on over heat source.
• As water starts boiling it rise up through the pipe
and infuses ground coffee and drips to the
bottom chamber and gets mixed with water in it.
• This continues till temperature of water reaches
boiling point at this stage percolator stops
automatically . Coffee is then ready to use.
5. Vacuum Infusion Method ( Cona) -
• Also known as ‘Cona Coffee’.
• this equipment has two bowls, one placed over
other and filter made of metal or plastic and a tube
connecting two bowls which are made up of either
glass or metal.
• Lower bowl is filled with hot water to level marked
Upper bowl is then set over lower tightly, with filter
placed in the upper bowl.
• Measured quantity of ground coffee is then added
to upper bowl and machine is switched on.
• Water reaches boiling point & rises up the tube to
upper bowl and mixes with ground coffee, mixture
can also stirred gently by long spoon.
• Once heat is reduced liquid passes back to lower
Lower bowl leaving particles of coffee in upper bowl.
• The upper bowl and filter is removed and washed.
the coffee in the lower bowl is ready for use.
6. Filter Method

b) Individual Filter Method
a) Pour Through Filter Method –
• Suitable for commercial operations. In most of the
Coffee houses and popular restaurants use electric
machines.
• Before using make sure that filter is thoroughly
cleaned/new filter paper is placed.
• Fresh water is poured to the level indicated, then
vacuum packed coffee is placed, and machine is
switched on.
• Hot water infuses with the coffee powder and
filters into the serving cup. Milk and sugar are
optional to use as per drinkers choice.
b) Individual Filter Method -
• Very convenient method of making single cup of
coffee. Individual filter is disposable plastic unit
placed over cup with measured quantity of ground
coffee in it.
• Boiled hot water is pour through filter infuses
with coffee and collected in the cup. Filter is then
thrown off and coffee is served with milk and
sugar as option.
7. Espresso Method -
• This is Italian method of making coffee which uses
electrically operated machine.
• This machine uses hot steam under pressure to
make coffee extract (infusion).
• Milk is heated by steam under pressure to create
froth which is poured over coffee infusion as per
type of espresso coffee. Sugar is offered separately.
• Espresso machine prepares coffee within a 60
seconds.
8. Turkish Method -
• A special copper pot with long handle is used to
make this coffee.
• The finely ground coffee is added and stirred before
serving.
• The pot is placed on stove with water and sugar,
and allowed to boil.
• Then finely ground coffee (one teaspoon coffee per
person)is stirred in. It is again allowed to boil.
• Then sprinkle some cold water to settle the
grounds completely and then covered with a lid.
• It is served with vanilla pod or cardamom.
