Meaning:
Milk processing means the
• handling
• preparing
• packaging
• or processing of milk in any manner in preparation for
sale as food,
Definition:
Milk processing allows the preservation of milk for
days, weeks or months and helps to reduce food-borne
illness.  5
TECHNIQUES USED IN MILK
PROCESSING
The processing of milk includes various
operations ranging from collecting milk from
the farm,
•Storing milk in tanks,
•Separating,
•Pasteurizing and
•Homogenizing to improve the quality of the
milk

PASTEURIZATION
•The partial sterilization of a product, such
as milk or wine, to make it safe for
consumption and improve its keeping
quality.

•Pasteurization reduces the risk of food


poisoning

What is pasteurization in
milk?
•Pasteurized milk is raw milk that has been
heated to a specified temperature and time to
kill pathogens that may be found in the raw
milk.

•Pathogens are microorganism such as bacteria


that make us sick. Raw milk can contain
pathogens such as E. coli, Salmonella, other
bacteria. 8
UHT TREATMENT

•UHT milk is milk that has been processed at


ultra high temperature (UHT).

•The sterilization is made through rapid


heating of milk to a temperature of at least
135°C, keeping it there for a few seconds, and
then quickly cooling it down to ambient
temperature.
