INTRODUCTION

LITERATURE REVIEW

Drying is a process of moisture removal from agricultural products to a level that prevents microbial

efficient alternative to traditional sun drying. Solar dryers are generally classified into direct, indirect,
and mixed-mode dryers.

Direct solar dryers expose crops directly to sunlight, while indirect solar dryers use a solar collector to
heat air, which then passes through the drying chamber. Mixed-mode dryers combine both methods.
Researchers have shown that indirect solar dryers produce better quality dried products because they
reduce direct exposure to ultraviolet radiation, which can degrade nutrients and color.
