Tea

Scientific Name: Camellia sinensis L. O. Kuntze


Family: Camelliaceae

Origin: Tea was first used by the Chinese. The original place of tea is from Southeast China
(Szechwan-Yunnan) to Assam in India.

 It is an evergreen bushy plant native to Asia. Tea was first used as medicine in Southwest
China and became a popular drink during the Tang dynasty.
 Portuguese priests and traders introduced tea to Europe in the 16th century.
 In the 17th century, tea became fashionable in Britain, which then started growing tea in
India to avoid depending on China.

World Distribution:
 India’s share in world tea production: approximately 20% in 2022–2023

 Major producers globally:

 China (~2.2 million tonnes)


 India (~1.2–1.365 million tonnes)
 Kenya (~350–430 thousand tonnes)
 Sri Lanka (~250–300 thousand tonnes).

 Export performance (2024):

 India: ~255 million kg; Russia, Iran, and the UK remain top buyers in volume and value
 CTC tea still dominates production (~89% in past; likely similar now) while
orthodox/green/instant account for remaining ~11%

Tea Growing Areas in India:


Initially, tea was grown only in Upper Assam. Later, Darjeeling and Lower Assam, Nilgiri Hills
(Tamil Nadu), Tarai (foothills of Himalayas), Himachal Pradesh, and Meghalaya started tea
cultivation.

Tea Estates and Ownership:


In India, 80 percent of the tea area is in large estates of over 50 hectares, mostly owned by
corporate bodies.
North India has nearly 80 percent of India’s tea area, and South India has around 20 percent.

Health Benefits of Tea:

 Tea has a lot of antioxidants and less caffeine than coffee.


 It helps reduce the risk of heart attacks, strokes, and boosts the immune system.
 Tea contains an alkaloid called thein (2 to 5 percent), which helps reduce tiredness.
 However, drinking too much tea is harmful to the digestive system.
 Polyphenols in tea help lower blood cholesterol and help with diseases like hepatitis, high
blood pressure, and kidney stones.
 Black tea (fully fermented) has properties to fight ulcers and cancer.

Climate and Soil:

 Tea grows best in hot and humid climate with 20 to 27°C temperature.
 Above 35°C and below 10°C is harmful.
 Needs 150 to 300 cm of well-distributed rainfall.
 Tea is a shade-loving plant and grows better under shade trees.
 Soil should be deep, well-drained, loamy, rich in humus, and have pH between 4.5 to 5.5.
 Virgin forest soil with more potash and phosphorus gives special flavor like in
Darjeeling.
 Water-logging should be avoided.

Important Varieties:
Pandian, Sundaram, Golconda, Jayaram, Evergreen, Athrey, Brookeland, BSS 1 to 5, and
biclonal seed stocks and grafts.

Planting:

 Planting is done in April-June or September-November with irrigation.


 Avoid planting during heavy rain.
 Use healthy plants of 40 to 60 cm in height and about 0.5 cm thickness at the base.
 Plants should have at least 12 mature leaves and be 9 to 12 months old.

Types of Planting:

1. Pit planting
2. Trench planting

Nursery Preparation:

 Use well-drained loamy soil with pH 4.5 to 4.8.

 Pre-treatment of soil using aluminium sulphate to reduce pH


 Use polythene sleeves (10 cm wide, 30–45 cm long) with soil and sand mix. Provide
overhead shade.

Cuttings:

 Semi-hardwood cuttings are prepared during April-May and August-September with one
leaf and internode.
 Cuttings are hardened by gradually exposing to sunlight over 4 to 6 weeks.
 Rooting takes 10–12 weeks.

Spacing:
Planting density varies from 14,000 to 18,000 plants per hectare depending on spacing.
Common spacings are:
1.5 m x 0.75 m = 14,000 plants/ha
1.2 m x 0.75 m or 1.2 m x 0.6 m = over 16,000 plants/ha

Planting Methods:

 Single Hedge System – 1.2 m x 0.75 m = 10,800 plants/ha


 Double Hedge System – 1.35 x 0.75 x 0.75 m = 13,200 plants/ha

Irrigation:
Subsoil irrigation for young plants during summer.

Fertilizer Management:
Start 2 months after planting.
Phosphorus: 80–100 kg/ha as rock phosphate once a year, then once in 2 years.
N:K ratio = 2:3 for first 3 years and 1:1 later.

 Apply fertilizers before monsoon, avoid contact with collar of plant.

After Cultivation – Pruning and Training:


Centering – Done after 3–5 months to promote lateral growth.
Tipping – Done at 35 cm and again at 60 cm height.
Pruning – To maintain height and remove dead parts.
Types:

 Rejuvenation pruning – cutting close to the ground


 Hard pruning – 30 to 45 cm for young tea
 Medium pruning – below 60 cm
 Light pruning – below 65 cm
 Skiffing – lightest form, removing 5 to 8 cm of top shoot
Tea Pruning Operations –

 Centering
Definition: Removal of the terminal bud or main growing point of young tea plants (after
3–5 months of planting).
Purpose: To encourage lateral branching and bush formation.
 Tipping
Definition: Cutting off the top portion of the main shoot at specific heights (usually at 35
cm and then again at 60 cm).
Purpose: Promotes uniform and horizontal growth, preparing the plant for plucking.
 Pruning
Definition: A regular practice of removing parts of the tea bush.
Purpose: Maintains desired height, rejuvenates the plant, and removes unproductive,
diseased, or dead wood.

Types of Pruning

1. Rejuvenation Pruning
o Definition: Cutting the bush very close to ground level (5–10 cm from ground).
o Purpose: Applied to old or diseased bushes to promote fresh regrowth.
o Frequency: Rarely done, only for severely declining bushes.
2. Hard Pruning
o Definition: Cutting back young tea plants to a height of 30–45 cm.
o Purpose: Shapes the framework of the bush during early years.
o Stage: For formative training during the first few years.
3. Medium Pruning
o Definition: Cutting mature bushes to just below 60 cm height.
o Purpose: Done every 4–6 years to rejuvenate and control height.
o Effect: Encourages strong frame and better yield.
4. Light Pruning
o Definition: Cutting at a slightly higher level (below 65 cm).
o Purpose: Maintains bush shape and helps remove minor dead or weak parts.
o Frequency: Done in alternate years or as needed.
5. Skiffing
o Definition: The mildest form of pruning, removing just the top 5–8 cm of shoots.
o Purpose: Delays the need for major pruning and keeps the bush productive.
o Types: Deep skiff, light skiff (based on depth).

Shade Trees:
Permanent: Albizzia species, Silver oak, Dalbergia, Derris
Temporary: Indigofera, Glyricidia, Leucaena, Erythrina

Harvesting and Plucking:


Starts from 3 years of age. The best plucking is “two leaves and a bud.”
South India: Weekly plucking in March–May; 10–14 days during other months.
Rush Period – every 7–10 days
Lean Period – every 10–15 days
Plucking starts from 18 to 20 months under ideal conditions. Best quality comes from young
leaves.

Yield:
Made tea yield per hectare:

 20 q/ha = Low
 20–30 q/ha = Medium
 30 q/ha = High

Pest and Disease Control:


Tea Mosquito Bug:
Remove alternate host plants nearby. Spray:

 Imidacloprid 0.6 ml/l


 Thiamethoxam 0.6 g/l
 Profenofos 2 ml/l

Blister Blight (Fungus – Exobasidium vexans):


Spray 210 g Copper oxychloride + Nickel chloride per ha every 5 days from June to September,
and every 11 days in October and November. Or spray Hexaconazole 200 ml + Copper
oxychloride 210 g per ha every 5 days.

Tea Processing – Black Tea:


Three types based on rolling method:

1. Orthodox – Traditional rollers


2. CTC – Crush, Tear, Curl machines
3. LTP – Laurie Tea Process uses beaters

Steps in tea processing:

1. Withering – Reducing leaf moisture to 55 percent. Takes 12–18 hours.


2. Rolling – Breaks cells and releases sap with enzymes. 30–40 minutes.
3. Fermentation – On floors or trays in humid conditions. Color becomes golden red.
4. Drying – Reduces moisture to 4 percent to stop fermentation.
5. Cleaning and Grading – Removes stalks and grades tea by size.
Black Tea Processing –

Types of Black Tea Based on Rolling Method:

1. Orthodox Method – Traditional hand or mechanical rollers are used to gently roll the
leaves.
2. CTC (Crush, Tear, Curl) – Machine crushes, tears, and curls the leaves; gives strong
color and flavor.
3. LTP (Laurie Tea Processing) – Uses high-speed beaters to shred the leaves into fine
particles; cheaper and fast.

Main Steps in Black Tea Processing

1. Withering

 Purpose: To reduce moisture content of fresh green tea leaves from 70–80% down to 50–
55%.
 How: Leaves are spread out on withering troughs or racks with forced air or natural
drying.
 Time: 12 to 18 hours depending on weather.
 Result: Leaves become soft and suitable for rolling.

2. Rolling

 Purpose: To break the leaf cells and release juice (enzymes & polyphenols), which are
essential for fermentation.
 How:
o In Orthodox, leaves are rolled gently in cylindrical rollers.
o In CTC, leaves are passed through rollers with sharp teeth that crush, tear, and
curl.
o In LTP, beaters shred the leaves into small particles.
 Time: 30–40 minutes.
 Result: Leaf juices mix with oxygen and initiate fermentation.

3. Fermentation (Oxidation)

 Purpose: To allow chemical reaction between enzymes and air, changing color and
flavor of leaves.
 How: Leaves are spread on clean floors or trays in humid, cool air (24–27°C, 90–95%
RH).
 Time: 2 to 3 hours.
 Result: Leaves change color from green to coppery-red; aroma develops.

4. Drying (Firing)
 Purpose: To stop fermentation and reduce moisture to 3–4% for safe storage.
 How: Leaves are passed through hot air dryers at 90–100°C.
 Time: 20–30 minutes.
 Result: Leaves turn black and brittle.

5. Cleaning and Grading

 Purpose: To remove stalks, fibers, and to classify tea based on size.


 How:
o Sieving and Winnowing machines are used.
o Tea is graded into BOP, BOPF, Dust, etc.
 Result: Tea is ready for packing and sale.

Green Tea Processing –


 No fermentation (oxidation) → This keeps the green color, natural antioxidants, and
a fresh taste.

1. Plucking

 Only tender, young leaves and buds are plucked.


 Usually, two leaves and a bud are harvested manually or by machines.
2. Withering (Optional & Light)

 Done only in some methods (like pan-firing).


 Reduces moisture slightly (for 2–4 hours) and makes the leaves soft.
 In many methods, directly steamed or pan-heated, skipping full withering.

3. Fixation / Inactivation (Enzyme Deactivation)

 Most critical step in green tea processing.


 Purpose: To stop oxidation by destroying enzymes.
 Methods:
o Steaming (Japanese method)
o Pan-firing or Roasting (Chinese method)
 Time & Temperature: 100–120°C for 30–60 seconds.

4. Rolling

 Leaves are rolled and twisted into desired shapes (needle, pearl, curled).
 Rolling breaks leaf structure slightly and improves flavor release in brewing.
 May be done by hand or using mechanical rollers.

5. Drying

 Purpose: To reduce moisture content to 2–3% and stabilize the tea.


 Methods:
o Hot air drying
o Sun drying
o Oven drying
 Temperature: Around 100°C
 Leaves become dry, crisp, and ready for storage.

6. Grading and Packing

 Leaves are sieved and sorted by size and shape.


 Packed in moisture-proof containers to maintain freshness and quality.

 Green tea is non-fermented and retains more catechins (antioxidants), giving it a fresh
taste, pale green color, and health benefits.
 The choice of steaming vs pan-firing affects the flavor:
o Steamed tea (like Japanese Sencha) → grassy, fresh taste
o Pan-fired tea (like Chinese Longjing) → roasted, nutty taste

• यह नदल के दौरे , स्टर ोक का खतरा कम करती है और िनतरिा िणाली को मजबूत बिाती है ।
• चाय में थीि (Thein) िामक िारीय तत्व होता है (2 से 5 िनतित), जो थकार्ट को कम करिे में सहायक
है ।

• नमट्टी: गहरी, अच्छी जल निकासी र्ाली, दोमट, ह्यूमस से भरपूर, pH 4.5–5.5 होिी चानहए।
• कुमारी र्ि भूनम नजसमें पोटाि और फॉस्फोरस अनधक हो, नर्िेष स्वाद दे ती है (जैसे दानजवनलोंग चाय)।
• जल-जमार् से बचिा चानहए।

प्रमुख नकस्में (Important Varieties):

पाों नडयि, सुोंदरम, गोलकोोंडा, जयराम, एर्रग्रीि, आत्रेय, िूकलैंड, BSS 1 से 5, निक्लोिल बीज स्टॉक और
ग्राफ्ट् स।

िोपण (Planting):

• रोपण का समय: अिैल-जूि या नसतोंबर-िर्ोंबर (नसोंचाई की व्यर्स्था के साथ)


• तेज र्षाव के दौराि रोपण से बचें।
• स्वस्थ पौधोों का चयि करें : ऊँचाई 40–60 सेमी, आधार मोटाई ~0.5 सेमी, कम से कम 12 पक्की पनत्तयाों ,
आयु 9–12 महीिे।

िसािी तैयािी (Nursery Preparation):

• अच्छी जल निकासी र्ाली दोमट नमट्टी, pH 4.5–4.8


• नमट्टी को पहले aluminium sulphate से उपचाररत करें तानक pH कम हो सके
• 10 सेमी चौडी र् 30–45 सेमी लोंबी पॉलीथीि थैनलयोों में नमट्टी और रे त का नमश्रण भरें ; ऊपर से छाया दें ।

कन ं ग (Cuttings):

• अधव-कठोर कनटों ग अिैल-मई र् अगस्त-नसतोंबर में ली जाती हैं ; ित्येक में एक पत्ती र् एक इों टरिोड होिा
चानहए।
• कनटों ग को 4–6 सप्ताह तक धीरे -धीरे धूप के सोंपकव में लाकर सख्त बिाया जाता है ।
• जड बििे में 10–12 सप्ताह लगते हैं ।

काटिा।

3. क ाई (Pruning)

क ाई के प्रकाि (Types of Pruning):

1. पुिरुद्धाि क ाई (Rejuvenation Pruning)

 परिभाषा: झाडी को ज़मीि के बहुत पास (5–10 सेमी) से काटिा।


 उद्दे श्य: पुरािे या रोगग्रस्त पौधोों में िई र्ृण्वि को िोत्सानहत करिा।
 आवृनि: बहुत कम की जाती है , केर्ल अत्यनधक खराब अर्स्था में।

2. कडी क ाई (Hard Pruning)

 परिभाषा: युर्ा चाय पौधोों को 30–45 सेमी की ऊोंचाई तक काटिा।

3. मध्यम क ाई (Medium Pruning)

4. हल्की क ाई (Light Pruning)

 परिभाषा: लगभग 65 सेमी की ऊोंचाई तक हल्का काटिा।

5. स्किनफंग (Skiffing)

Black Tea Processing (काली चाय प्रसंििण) की मुख्य प्रनियाएँ

1. Withering (मुिझािा / नवस्कटंग)

• उद्दे श्य: ताज़ी हरी चाय की पनत्तयोों की िमी की मात्रा को 70–80% से घटाकर 50–55% तक लािा।
• कैसे: पनत्तयोों को र्ीदररों ग टर फ (Withering troughs) या रै क पर फैला नदया जाता है , नजिमें बलपूर्वक
हर्ा दी जाती है या िाकृनतक रूप से सुखाया जाता है ।
• समय: मौसम पर निभवर करते हुए 12 से 18 घोंटे।
• परिणाम: पनत्तयाँ मुलायम हो जाती हैं और रोनलोंग (लपेटिे ) के नलए उपयुक्त बि जाती हैं ।

2. Rolling (िोनलं ग / लपे िा)


• उद्दे श्य: पनत्तयोों की कोनिकाओों को तोडिा और रस (एों जाइम और पॉलीफेिॉल) को बाहर निकालिा,
जो नकिि (fermentation) के नलए आर्श्यक होते हैं ।
• कैसे:
o ऑर्थोडॉक्स (Orthodox) नर्नध में, पनत्तयोों को बेलिाकार रोलसव में धीरे -धीरे रोल नकया जाता है ।
o सी ीसी (CTC) में, पनत्तयाँ तेज़ दाों तोों र्ाले रोलसव से गुज़रती हैं , जो उन्हें क्रि (कुचलते ), टीयर
(फाडते ) और कलव (मोडते ) हैं ।
o एल ीपी (LTP) में, बीटर (beaters) पनत्तयोों को छोटे टु कडोों में काटते हैं ।
• समय: 30–40 नमिट।
• परिणाम: पनत्तयोों का रस हर्ा के सोंपकव में आता है और नकिि िुरू होता है ।

3. Fermentation (Oxidation) [नकण्वि / ऑक्सीकिण]

बदलता है ।
• कैसे: पनत्तयोों को साफ़ फिव या टर े पर ठों डी और आर्द्व हर्ा (24–27°C तापमाि, 90–95% आर्द्वता) में
फैलाया जाता है ।
• समय: 2 से 3 घोंटे।
• परिणाम: पनत्तयोों का रों ग हरे से ताों बई-लाल (Coppery-red) में बदल जाता है ; खुिबू उत्पन्न होती है ।

4. Drying (Firing) [सुखािा / सेंकिा]

• उद्दे श्य: नकिि को रोकिा और िमी को 3–4% तक कम करिा तानक भोंडारण सुरनित हो सके।
• कैसे: पनत्तयोों को 90–100°C तापमाि पर गमव हर्ा र्ाले डरायर से गुज़ारा जाता है ।

• परिणाम: पनत्तयाँ काली और कुरकुरी (भुरभुरी) हो जाती हैं ।

5. Cleaning and Grading (साफ़ कििा औि ग्रेनडं ग कििा)

• उद्दे श्य: डों ठल, रे िे हटािा और आकार के आधार पर चाय को र्गीकृत करिा।
• कैसे:
o छं ाई (Sieving) और हवा से अलग कििे वाली मर्ीिें (Winnowing machines) का उपयोग

o चाय को BOP, BOPF, Dust आनद श्रेनणयोों में ग्रेड नकया जाता है ।

1. प्लनकंग (Plucking)

• केर्ल कोमल, युर्ा पनत्तयाँ और कनलयाँ तोडी जाती हैं ।


• आमतौर पर दो पनत्तयाँ और एक कली हाथ से या मिीि से काटी जाती हैं ।

2. नवदरिं ग (Withering) – वैकस्किक औि हल्का
