Introduction

Menu engineering is a scientific method used by restaurants and hotels to study the
profitability and popularity of each menu item. It helps management decide which dishes
should be promoted, redesigned, repriced or removed. Menu engineering focuses on
increasing profit without increasing the number of customers. It is an important tool for
hotels to understand customer preferences and improve financial performance.
Meaning of Menu Engineering

Menu engineering is the process of analysing menu items based on two factors:

1.​ Popularity – how often the dish is ordered.​

2.​ Profitability – how much profit the dish generates.​



It helps categorize dishes and make decisions about pricing, design, placement and
marketing. The purpose is to increase the sale of high-profit items and improve menu
performance.​

Importance of Menu Engineering

Menu engineering helps restaurants improve income by understanding which items bring
profit. It also supports better menu design, cost control, and customer satisfaction. Proper
menu engineering can raise a restaurant’s profit by 10–15%. It also helps control food cost,
reduce waste and keep the menu balanced.

Steps in Menu Engineering

1.​ Collect Sales Data: Identify how many times each item is sold.​

2.​ Calculate Food Cost: Find out cost of ingredients of each dish.​

3.​ Calculate Contribution Margin (Profit per dish): Selling price – food cost.​

4.​ Determine Popularity: Compare the number of orders with menu average.​

5.​ Classify Menu Items: Use the Menu Engineering Matrix.​

6.​ Take Action: Promote stars, improve puzzles, fix plowhorses, remove dogs.​
Menu Engineering Matrix

Menu items are classified into four categories:

Stars

High popularity + High profitability

They are the best dishes. Promote them strongly.

Plowhorses

High popularity + Low profitability

Guests like them, but profit is low. Adjust portion size or increase price.

Puzzles

Low popularity + High profitability

These items need better marketing and description to increase orders.

Dogs

Low popularity + Low profitability

These items should be removed or redesigned.
