Introduction
Introduction
The design methodology for grease trap described in this document has been
taken from the technical specifications for the design of grease traps at the Center
Pan American Conference on Sanitary Engineering and Environmental Sciences (CEPIS).
CEPIS stipulates that the use of grease traps is mandatory for the
conditioning of the drains from the washrooms, dishwashers or other appliances
sanitary facilities installed in restaurants, hotel kitchens, hospitals, and similar places, where
there is a risk of introducing enough fat that affects the good
operation of the wastewater evacuation system, as well as of the
laundry downloads of clothes.

Q = maximum flow in l/s.
∑ p = sum of all the units of expenditure to be handled by the grease trap.
The expenditure units of the sanitary devices that discharge into the grease trap are
shown in Table 1.
