Introduction

It is estimated that the main cause of foodborne illnesses


and the deterioration of these is due to the presence or action of microorganisms,
which results in significant economic losses in terms of expenses in
health, absenteeism, and food losses. Less frequent, but of
equal importance is the occurrence of risks originating from hazards of
physical and chemical nature. In order to prevent the occurrence of these
events, the HACCP system has been widely used to provide assurance
that, during the production process, the appropriate measures have been taken
to produce safe food. For the HACCP methodology to deliver
good results, it is not only important to apply it systematically, but also
what is fundamental is that both the management of the food facility
how all your staff is committed and participates fully in the
development of the plan that is to be implemented.

Establish the role of management

The HACCP system is based on an engineering system known as Analysis.

Training plan on HACCP

Training staff must be part of a plan, with the aim of being
