3/4 tsp vanilla extract
1/4 c. maple syrup, plus more for serving
1/2 c. pumpkin seeds
1/2 c. pecans or hazelnuts, roughly chopped
1/4 c. sunflower seeds
PROCESS
1. Preheat the oven to 325°F. Grease a loaf pan
with butter. Pour the blackberries onto the
bottom of the pan and spread so they are at an
even height.
2. In a large bowl, mix together the oats, baking
powder, ginger or cinnamon, and salt. Pour over
the blackberries. Whisk the eggs, milk, and vanilla
extract together in the same large bowl, then
pour over the oats, evenly soaking the entire
mixture.
3. In a small bowl, use your fingers to mix
together the maple syrup, pumpkin seeds, nuts,
and sunflower seeds until they are all evenly
coated. Sprinkle the seed mixture over the top of
the oatmeal. Bake for 50 minutes to 1 hour, until
the oatmeal is set and the seeds are lightly
browned and crunchy. Serve at any temperature
with a drizzle of maple syrup. Keep leftovers in the BENEFITS

INGREDIENTS PROCESS
For the pudding: 1. Blend milk, cherries, cardamom, Stevia
2 1/2 cups unsweetened almond milk and vanilla together in a blender on high
1/2 cup bing cherries, pitted and halved until smooth. Pour the cherry mixture
1/2 teaspoon ground cardamom over chia seeds and whisk thoroughly.

INGREDIENTS
2 eggs

4 slices sprouted grain bread
1/2 cup shredded unsweetened coconut
1/3 cup sliced strawberries
PROCESS
1. In a shallow dish, whisk together the eggs,
vanilla, and cinnamon; set aside.
2. In a skillet, melt coconut oil over medium
heat.
3. Dip bread one slice at a time into the egg
mixture, soaking each side.
4. Move the bread from the egg mixture
directly to the coconut to cover both sides.
5. Carefully lay the bread onto preheated
skillet and cook until golden brown on each
side, about 2-3 minutes.

3 large very ripe bananas, peeled

1 tablespoon coconut oil, slightly warmed,
but not melted
2 tablespoons agave nectar or maple syrup
1 teaspoon vanilla extract
2 1/2 cups gluten-free oats
1 teaspoon baking powder
1/4 teaspoon ground cinnamon
1/4 teaspoon sea salt
3/4 cup vegan chocolate chips
PROCESS
1. Preheat oven to 350 degrees F. Line a large
baking sheet with parchment paper or a

2. In a large bowl, mash the ripe bananas

PROCESS
1. Line an 8x8" brownie pan with parchment

2. In a medium-sized mixing bowl, add the
crispy brown rice cereal.
3. In a large microwave-safe bowl, stir
together the honey, almond butter, vanilla
paste, stevia extract, blueberry flavor, lemon
flavor, and salt. Microwave at 20-second
intervals, stirring between each one, until

PROCESS
1. Preheat oven to 350F. Grease a 8×8″
baking dish with coconut oil/non-stick
cooking spray. Set aside.
2. In a small bowl, stir together applesauce,
coconut oil, vanilla extract and cocoa
powder. The mixture will be dry and clumpy.
Scoop the cocoa mixture into the bowl of an
electric mixer and add in the egg and honey.
Use the whisk attachment to vigorously
whisk together the cocoa mixture until
smooth.
3. In a separate bowl, combine almond flour,
oat flour, baking powder and salt. Pour the
dry ingredients into the wet ingredients and
whisk together until well combined (the
batter will likely look a little lumpy from the
almond meal/flour).
4. Pour the batter into the prepared baking
dish and use a spoon to spread the batter
evenly to all corners. Bake for 20 minutes.
Allow to cool completely before slicing (like
that’s gonna happen).
Vanilla Chia
Pudding
INGREDIENTS
Chia seeds – use black or white
Unsweetened plant milk – almond, coconut,
oat, soy, or your favorite non-dairy milk
Vanilla – use vanilla extract, vanilla bean, or
ground vanilla
Pure maple syrup – can sub with coconut
sugar or be optional
PROCESS
1. Combine. Place chia seeds, almond milk,
vanilla, and sweetener in a container or bowl
and mix well.
2. Stir twice. Place covered in the refrigerator
and give a good mix after 5 and 10 minutes.
Mixing just once or twice will do. Mixing is
important since the seeds will fall to the
bottom of the container, if not shaken or
stirred every now and then it won’t thicken
and set properly.
3. Before & after. Above you’ll see the
difference between before and after. The jar
on the left has just been mixed together and
the jar on the right is what it will thicken up to
look like after six hours or so.
4. Keep refrigerated.

Blueberry Microwave Muffin

PROCESS
1. In a bowl, stir together the frozen
blueberries, milk, applesauce and vanilla.
2. In another bowl, whisk together the
sorghum flour, flaxseed meal, baking
powder, sweetener and salt. Dump the dry
ingredients into the wet ingredients and stir
together until fully incorporated.
3. Spray a large ramekin with cooking spray
and pour in the muffin batter. Microwave for
4 minutes, or until the surface of the muffin
springs back when tapped. Let cool slightly,
then enjoy!
