Course Description:
This course introduces the basic production processes and varieties of
alcoholic and non-alcoholic beverages. This includes understanding and
demonstrating wine service, cocktail & mock tail concoctions and flair tending. This
course allows student to acquire and to evaluate information about bar parts,
equipment and tools and bar duties and responsibilities standards set by the
industry, academe and TESDA. As a result, student develops skills in bar
management and attains the attitudes and personal qualities of a professional
bartender.

DISTILLED BEVERAGES
Brandy – distilled made from fermented grapes.
Rum – distilled made from fermented sugar cane.
Tequila – distilled made from agave, or cactus-like plant.
Vodka- distilled made from grain or fermented potato juice.
Whisky – distilled made from fermented barley, rye, oats, or corn.
BRANDY
Dark spirit distilled from fermented grapes.
Distilled at 35-60 % alcohol per volume aged and blended.
Considered as Europe’s first spirit.
2-3 years “Young Brandy”; 10-15 years “Good”; 40-60 years “Excellent
Quality”
Best served “neat” in a brandy snifter at room temperature.

Premium brandy made in Cognac
Region, France.
Uses Colombard, Folle Blanche
and St. Emilion grapes.

ARMAGNAC
Darker and drier type of brandy
distilled from premium white wine
grapes of Armagnac Region,
Southwestern France
World’s oldest brandy
Example: JANNEAU (France)

Strong and flavorful premium
French brandy distilled from black
grapes in Burgundy, France
Also called as Pomace Brandy
Example: LE PERE JULES (France)
PISCO
Premium brandy distilled from
Muscat wine in Chile & Peru.
Aged in clay jars or oak jars.
Famous brandy in South America.
Example: PORTON (Peru)
FRUIT BRANDY
Clear, brandy-based spirits
distilled from fermented juice of
certain fruits.
Usually bottled at 40 to 45 %
alcohol per volume.
Example: PORTON (Peru)
WHISKY

Spirit distilled from fermented and malted grains, usually barley.
Best served “neat” or “on rocks” with tonic or mineral water.

Blended, light sweet type of
whisky made from various cereal
grains.
Considered lightest and mildest of
all whiskies.

IRISH WHISKY
Light, smooth and sweet whisky
which is triple distilled.
World’s first whisky.
Aged from 3-15 years in sherry
oak casks.
Example: JAMESON (Ireland)
SCOTCH WHISKY

Whisky made from malted barley,
distilled and matured for at least 3
years.
Distinctive smoky flavor
Aged in the barrel, not the bottle.

RUM
Aged spirit distilled from fermented syrup of molasses or sugarcane juice.
Originated from Caribbean countries.
Aged from 2 to 10 years and can be:
LIGHT – aged in stainless steel containers
DARK – aged in charred oak casks and caramel appearance is added

activity and this is the cocktail mixing. It would be best if you are going to prepare
for it as this is the most exciting and engaging activity in our subject. One of the
preparations you will do is to list as many cocktail by its spirit base as you can for
you advance familiarization. Downloading the app “Cocktail Flow” is helpful.
