An undergraduate research manuscript submitted to the faculty of the Department of

Hospitality Management, Cavite State University–Imus Campus in partial fulfillment
of the requirements for the subject BSHM 28: Research in Hospitality. Prepared
under the supervision of Ms. Jizza Mae V. Mondol.

INTRODUCTION

An introduction answers the following questions.

 What is the problem?

 Why is it a problem?

 How it should be solved?

 Why it should be solved?

 What is the purpose of the study?

Statement of the Problem

To determine the acceptability of the product by answering specific questions.

1. What are the sensory properties of the product in terms of:

a. color;

b. taste; and

c. texture?

2. What is the general acceptability of the product?

3. What is the best treatment of the product?

a. Treatment 1 - 100% (variation A of the product)

b. Treatment 2 - 100% (variation B of the product)

c. Treatment 3 - 50% (variation A of the product) and 50% (variation

B of the product)

4. What are the theoretical nutrient contents of the product?

5. What is the production cost of the product?

Objectives of the Study

It should be closely related to the statement of the problem and summarize

the aim that will be achieved by the study.

Significance of the Study

It provides details to the reader on how the study will contribute such as what

the study will contribute and who will benefit from it. It also includes an explanation of

the work’s importance as well as its potential benefits.

Scope and Limitation of the Study

Sets the scope and limitation of the research in order to provide a clear focus.

Definition of Terms

Identifies and defines key terms found in the research

REVIEW OF RELATED LITERATURE

Organized related literature and studies inform the reader what is a known

and conflicting area. The word “review” means that the research goes over the

materials, books, journals articles, theses, dissertations and internet presentations.

The purpose is to determine what has been written about the problem. The word

“related” means “similar” especially on the problem dimension.

 The main ingredient

 Varieties of the main ingredient

 Culinary uses and health benefits of the main ingredient

 History of the dish

 Ingredients in making the dish

 Storing and handling the dish

Common questions

The scope and limitations of a study define the boundaries and constraints under which the research is conducted, such as the study's specific focus, population, and methodology. These factors can impact the conclusions by restricting the generalizability and applicability of the study's findings, necessitating careful consideration and accurate reporting to ensure the results are interpreted appropriately .

The sensory properties of a product, such as color, taste, and texture, play a critical role in determining product acceptability as they directly influence consumers' perceptions and satisfaction. Evaluating these attributes allows researchers to identify which variations or treatments of a product are more favorable, thereby optimizing the product for market acceptance .

Clearly stating the research problem in the introduction of a study is crucial because it sets the foundation for the entire research process. It helps to define the focus and scope of the study, guiding the direction of the research and informing the reader what specific issue the study aims to address .

An abstract is essential as it provides a concise summary of the research, including the research problem, objectives, methods, key results, and conclusions. This allows readers to quickly understand the study’s purpose and findings and decide on the relevance and interest of the full paper .

Acknowledgments in a research manuscript typically include expressions of gratitude to advisors, colleagues, funding agencies, and other individuals or institutions that contributed to the research. They are significant as they recognize the support and contributions that facilitated the research process, reflecting the collaborative nature of academic work and giving credit where it is due .

Statistical treatments commonly used in analyzing sensory properties in food research include Analysis of Variance (ANOVA) and Sensory Evaluation Tests like hedonic scales and ranking analysis. These methods are necessary to objectively quantify differences in sensory attributes among treatments, providing reliable data to support conclusions on product acceptability or improvement .

The experimental treatments in the hospitality research involve different variations of the product, such as 100% variation A, 100% variation B, and a combination of both. These treatments aim to determine the impact of different formulations on the sensory properties and general acceptability of the product, ultimately identifying the most favorable variant .

The experimental design of a study affects its results and conclusions by determining the framework for data collection and analysis. A well-designed experiment ensures that the findings are valid and reliable, minimizing biases and errors. It allows for systematic manipulation and control of variables, making it possible to draw robust conclusions about causal relationships .

The review of related literature is important because it situates the current study within the context of existing research, highlighting what is already known and identifying gaps or conflicting findings that the study aims to address. This foundation supports the study’s rationale and significance and helps refine research questions and hypotheses .

Ethical considerations in data gathering include ensuring informed consent, safeguarding participants' privacy, and complying with data protection regulations such as the Data Privacy Act of 2012. Researchers must also ensure that participants are not harmed or subjected to undue stress during the study, maintaining integrity and transparency in reporting processes and findings .
