INTRODUCTION

Under the scheme of the current health legislation in Colombia, it is mandatory that all

quality of drinking water, which ensures the availability, supply, and quality of water,
avoiding the risk of contamination by microbiological, chemical or physical factors. In the
company INDUSTRIAS ARDICAR S.A.S (RAIN OF GOLD), this program is essential

6. THEORETICAL FRAMEWORK.

THE USE OF WATER IN FOOD PRODUCTION

Water is routinely used in food production as an ingredient, element.

for cleaning or sanitation and for manufacturing purposes. The water used in production and
in cleaning, it is the one that is in direct contact with food, which is why it must be
potable, that is, free of taste, odor, color, and with excellent microbiological quality.

company. The hardness of water, caused by the presence of substances such as calcium,
magnesium, iron, and aluminum causes the formation of precipitates in the pipes and is
harmful in the boilers. To avoid this problem, they can be softened through various
methods such as the use of lime and soda and ion exchange. According to the amount of
calcium that contains water is classified as follows:

Softness: 0 to 75 mg/l as CaCO3

Moderate: 75 to 150 mg/l as CaCO3
Hardness: 150 to 300 mg/l as CaCO3
Very hard: more than 300 mg/l

Water sources

Two sources of water supply are known: groundwater and surface water.
The first are captured through aquifers or geological formations that store
water. Generally, groundwater has good sanitary conditions and is suitable for the
consumption; it should occasionally be treated.

The surface waters of lakes and rivers contain organic matter and other impurities.
like important microorganisms, causing enteric infections, among which are
they include cholera, salmonellosis, bacillary dysentery, and others. This water is extracted from the
source through engineering works called catchments. They are stored in tanks for
subsequently treated physically, chemically, and biologically.1

for drinking, cooking, and food preparation) and, in principle, it cannot contain microorganisms

Water treatment

Water treatment processes remove pathogens and impurities that, if not addressed...
ingesting them can be harmful to human health.
Although the treatment processes vary depending on the source of the water, they usually
add an absorbent material to the water that clumps dirt together and forms heavy particles, the

Water usage
There are four broad uses of water in food production:

The most widespread use of water is irrigation in primary plant production (for example,

food transformation is increasingly important, as it allows for the conservation of water, reduces
the costs and provide security in water supplies.

In some circumstances, the agri-food sector uses non-potable water, for example in the
fire prevention and steam production. In these cases, water must be marked
clearly like non-potable water and should not be connected to the supply of
water used directly in food production nor any possibility that

Storage of drinking water in Plant

In the food industry, water storage is one of the most important factors.

between 6.5 and 9.0 units.

7.8. Procedure for water sampling

Simple Sample: It is a point sample taken without considering factors such as the
variation of hourly flow.

a) Sampling for physicochemical analysis:

Open the faucet or valve completely, rinse the container two or three times with water.
analyze and wait ten seconds to take the sample. The samples taken must be sent
to the laboratory as soon as possible.

b) Sampling for microbiological analysis:

The containers for taking chlorinated water samples must be sterile.
For taking samples from taps or faucets, they must be washed and disinfected.
the nozzles with the flame of a lighter, with ethanol or with hypochlorite.
Let the water flow for 15 seconds and then take the sample until reaching a
volume of 250 ml.
Take to the laboratory for immediate analysis.

7.9 Sampling plan

The analyses to be carried out by the internal and external laboratory, the frequency, responsible for
sampling, are found in the annexes of the Sampling Plan Program 02-GIN-027 of the
Annex 1 General Sampling Schedule and Annex 2 Schedule of
follow-ups and sampling.

Additionally, an annual water monitoring is conducted to verify

through physicochemical and microbiological analysis the quality of it. This analysis is
carried out in the Drinking Water Quality Control Laboratory that is properly
accredited to carry out this type of analysis.

7.10 Cleaning and disinfection

The company has a Sanitary Operations Procedure for common areas and
surroundings 02-GIN-041 associated with the Cleaning and Disinfection Program 02-GIN-015, the
which applies to the washing of the main and reserve potable water tanks.

The frequency of washing the different water storage tanks has been
initially established with a frequency of six months, unless some is presented
abnormality that requires an extraordinary wash or that is done for production reasons,
necessary to postpone it. The washing record of these tanks is in the format
