Review of Related Literature


This chapter presents the review of related literature and studies that provide the scientific
and empirical foundation for the development of rice flour crackers enriched with
malunggay (Moringa oleifera) and soy pulp (okara). The discussion is organized according
to the main ingredients of the product, as well as consumer trends in functional foods.

Rice Flour as Base Ingredient


Rice flour is widely recognized as a gluten-free alternative to wheat flour in the formulation
of baked and snack products. Juliano (2016) emphasized its digestibility and hypoallergenic
properties, which make it suitable for individuals with gluten intolerance. Uivarasan et al.
(2024), in their study on rice flour crackers, demonstrated that substituting wheat flour
with rice flour improved crispiness and reduced glycemic response while maintaining high
consumer acceptability. Similarly, Perez et al. (2018) reported that rice flour contributes to
desirable texture and sensory quality in cracker formulations. These findings validate the

Malunggay (Moringa oleifera) as Nutritional Additive
