CHAPTER ONE

BACKGROUND STUDY

The kitchen is an essential space in every household, restaurant, or food-related facility where
meal preparation and cooking occur. These processes involve various thermal and chemical
operations such as boiling, frying, baking, roasting, and grilling, which generate significant
amounts of heat, steam, grease, smoke, and odors. Additionally, combustion by-products such as
carbon monoxide (CO), nitrogen dioxide (NO₂), carbon dioxide (CO₂), and volatile organic
compounds (VOCs) are often released into the air. These emissions, if not properly controlled or
extracted, lead to a degradation in indoor air quality, discomfort to the occupants, and even long-
term health risks, especially in enclosed cooking environments.
To address these problems, the kitchen fume extractor, also referred to as a kitchen hood, range
hood, or exhaust hood, was developed. This mechanical device plays a crucial role in enhancing
air quality by drawing polluted air away from the kitchen space and either expelling it outside
through a duct or filtering and recirculating the air. A typical fume extractor comprises
components such as fans or blowers, filters (e.g., mesh, baffle, or carbon), control switches, and a
housing enclosure.

Different cultures have distinct cooking practices, which influence the intensity and type of
emissions in a kitchen. In Nigeria and many African countries, cooking methods such as deep
frying, open flame grilling, and the use of firewood, charcoal, or kerosene stoves are still
prevalent, especially in semi-urban and rural areas. These practices generate high volumes of
smoke and greasy vapors. Nigerian dishes like akara, moi-moi, egusi soup, or jollof rice involve
high heat and the use of palm oil or groundnut oil, contributing to dense emissions.

In many homes, especially those without proper ventilation, fumes build up over time, settling on
walls, ceilings, and kitchen appliances, leading to poor aesthetics and hygiene issues. This makes
a compelling case for custom-designed kitchen fume extractors that consider local cooking
intensity and fuel types.

Health Implications of Kitchen Fumes

The dangers of poor kitchen ventilation go beyond discomfort. Numerous studies have
established links between indoor air pollution and various health issues. Exposure to smoke,
grease, and cooking gas fumes can cause:

• Respiratory problems (asthma, bronchitis)

• Eye and skin irritation


• Headaches and nausea

• Cardiovascular complications

• Increased risk of lung cancer due to long-term inhalation of particulate matter

Women and children, who often spend more time in the kitchen in traditional Nigerian
households, are disproportionately affected. The World Health Organization (WHO) reports that
over 3.8 million people die annually from illnesses attributable to household air pollution, with a
significant portion resulting from cooking emissions. Thus, investing in kitchen fume extraction
technology is not just a convenience but a public health necessity.
Recent innovations have transformed kitchen fume extractors into smart appliances. Modern
systems now include:
• Automatic sensors that detect heat or smoke and adjust fan speeds accordingly.

• Touch-screen control panels

• LED lighting systems for energy efficiency

• IoT connectivity that allows users to control the device via smartphone apps

• Self-cleaning functions that reduce maintenance needs

While these features offer improved user experience, they are often limited to high-end models,
which are typically imported and costly. For the Nigerian context, the challenge is to adopt
relevant features while ensuring affordability and ease of use.

Challenges in the Nigerian Context

Several barriers hinder the widespread adoption of kitchen fume extractors in Nigeria:

1. Cost: Imported models are expensive due to high shipping costs, import duties,
and currency exchange rates.

2. Awareness: Many households are unaware of the long-term health benefits of


fume extractors.

3. Electricity Supply: Frequent power outages make reliance on electric devices


problematic.

4. Incompatibility: Foreign designs may not accommodate the layout or ventilation


limitations of Nigerian homes.

5. Lack of local production: Most extractors are imported, and there is limited local
manufacturing capacity for such appliances.

These challenges highlight the importance of designing low-cost, effective, and context-specific
kitchen fume extractors using locally available materials and fabrication techniques.

The need for a kitchen fume extractor designed and fabricated locally is both timely and
necessary. This project provides an opportunity to combine engineering knowledge with social
impact. By utilizing locally sourced materials, the unit can be fabricated affordably. The
inclusion of dual functionality (ducted and ductless), reusable filters, and manual or solar-
powered fan options will make the product suitable for a wide range of users.

Additionally, the project serves as an educational tool, allowing students to apply principles of
thermodynamics, fluid dynamics, heat and mass transfer, and mechanical design. The prototype
could also act as a model for small-scale industrial production, supporting entrepreneurship and
job creation in the appliance manufacturing sector.

The background of this project reveals a pressing need for effective kitchen ventilation systems,
particularly in the Nigerian and broader African context. The traditional cooking environment,
combined with limited infrastructure and awareness, has contributed to high levels of indoor air
pollution. A locally designed and fabricated kitchen fume extractor addresses this issue from both
a health and engineering perspective.

Through careful analysis of existing systems, understanding local user needs, and leveraging
engineering principles, this project aims to produce a cost-effective, efficient, and durable fume
extraction solution. Beyond its technical importance, the project has societal, economic, and
environmental relevance, contributing to healthier homes, safer kitchens, and a cleaner living
environment.

STATEMENT OF PROBLEM

In many Nigerian households and small-scale food enterprises, kitchen environments are often
poorly ventilated, resulting in the accumulation of smoke, heat, steam, oil vapors, and harmful
gases produced during cooking. This is especially common in homes with enclosed kitchens and
in roadside food stalls where traditional methods such as deep frying and open-fire cooking are
extensively used. Without an effective means of fume extraction, these emissions degrade indoor
air quality, cause persistent discomfort, and pose serious health risks such as respiratory issues,
eye irritation, and long-term illnesses, including asthma and lung infections.

Despite the existence of kitchen fume extractors in developed markets, their adoption in Nigeria
remains significantly low. The primary reasons include high costs of imported units, lack of local

alternatives, insufficient awareness of their health benefits, and the unsuitability of many
commercial designs for local cooking habits. Most available models are either too expensive,
power-dependent (in a country plagued by irregular electricity supply), or incompatible with the
structural layout of typical Nigerian homes and kitchens.

Furthermore, many kitchens lack the infrastructure needed to install ducted systems, and the
ductless alternatives are rarely tailored to handle the heavy smoke and grease output associated
with Nigerian meals. This leaves a wide gap between the need for efficient ventilation and the
availability of affordable, locally adaptable solutions.

Given these challenges, there is an urgent need to design and fabricate a kitchen fume extractor
that is cost-effective, efficient, easy to install, and suitable for the unique cooking practices and
energy conditions found in Nigeria. The lack of such a solution not only compromises health and
comfort but also undermines kitchen safety and hygiene.

AIMS OF THE STUDY

The aim of this project is to design and fabricate a cost-effective kitchen fume extractor that
efficiently captures, filters, and treats fumes generated during cooking processes. These fumes
which may include smoke and harmful gases will be extracted from the kitchen environment and
passed through a treatment system designed to purify the air. The system will incorporate
suitable filtration technologies to remove particulate matter and neutralize toxic components,
ensuring that the treated air released either back into the kitchen or vented outside is clean and
safe for occupants. By emphasizing affordability, reliability, and ease of use, this project aims to
develop a practical solution for improving indoor air quality in domestic kitchens.

OBJECTIVES OF THE STUDY

The following steps outline the approach that will be adopted to successfully carry out the
project work:

• To select appropriate and cost-effective materials that ensure the durability,


functionality, and affordability of the kitchen fume extractor.

• To develop a conceptual design that outlines the structural layout, key


components, and operating principle of the fume extraction system.

• To perform detailed design calculations to determine critical parameters such as
airflow rate, motor capacity, filter specifications, and overall dimensions necessary for efficient
fume extraction and air treatment.

• To fabricate the designed extractor and conduct comprehensive testing and


evaluation to assess its performance in terms of fume removal efficiency, air purification
capability, and energy consumption under typical kitchen conditions.

SCOPE OF THE STUDY

This project focuses on the design and fabrication of a cost-effective kitchen fume extractor
intended for domestic use. The study covers the selection of suitable materials, development of a
conceptual design, and execution of necessary design calculations to ensure efficient fume
extraction and air treatment. The scope also includes the fabrication of the system using locally
available materials to promote affordability and ease of maintenance. The fume extractor will be
designed to capture a broad range of kitchen fumes including smoke, grease, odor, heat, and
gases and treat them through appropriate filtration mechanisms before either recirculating the air
or venting it outside. Both ducted and ductless configurations may be considered, depending on
the design outcome. The system’s performance will be tested and evaluated based on its ability to
remove fumes effectively, purify the extracted air, and maintain acceptable indoor air quality
levels.

However, the scope of the project does not extend to large-scale industrial or commercial fume
extraction systems. It also excludes advanced air purification technologies such as HEPA
filtration or UV sterilization due to cost and complexity constraints. The focus remains on
delivering a functional, efficient, and affordable solution suitable for typical household kitchen
environments.

SIGNIFICANCE OF THE STUDY

This project is important because it provides a cost-effective solution to the problem of indoor air
pollution caused by kitchen fumes. It helps protect human health by reducing exposure to
harmful smoke, grease, and gases during cooking. The design is especially beneficial to
homeowners, small-scale food vendors, and low-income households with poorly ventilated
kitchens. By treating and purifying the extracted air, the fume extractor also helps reduce the
release of pollutants into the environment, promoting cleaner indoor air and contributing to
environmental sustainability. Overall, the project improves living conditions and supports
healthier, safer kitchens.

Limitations of the Study

While this project aims to provide an effective and affordable solution for kitchen fume
extraction, certain limitations exist due to resource and scope constraints. The design is tailored
primarily for domestic use and may not be suitable for industrial or large-scale commercial
kitchens where higher-capacity extraction systems are required. Advanced purification
technologies such as HEPA filters, UV sterilization, or electrostatic precipitators are excluded
due to cost and complexity.

In addition, the performance evaluation will be based on basic test parameters such as airflow
rate, noise level, and visible fume reduction, rather than detailed chemical analysis of air quality.
The materials used are selected based on availability and cost-effectiveness, which may limit
long-term durability compared to more expensive commercial systems. Finally, the project is
constrained by available fabrication tools and workshop facilities, which may affect the level of
precision and finishing.
