Background:
A well-known dairy company, FreshDairy Ltd., recently launched a new probiotic yogurt
brand, NutriYogurt, claiming to contain beneficial bacteria that support gut health. The
company advertised that the yogurt contained Lactobacillus acidophilus and
Bifidobacterium bifidum, known for their probiotic benefits.

The Problem:
A month after launching NutriYogurt, reports started surfacing that consumers were
experiencing severe foodborne illnesses and allergic reactions after consuming the
product. Some symptoms included diarrhea, vomiting, bloating, and even skin rashes. Health
authorities conducted an investigation and issued a recall of the product.

Investigation Findings:

 Microbiological testing of the yogurt revealed contamination with Bacillus cereus, a


spore-forming bacterium that can cause food poisoning.
 Further analysis showed that the strain of Lactobacillus used was not the intended
probiotic strain but a closely related species that produced histamine, triggering
allergic reactions in some individuals.
 The company sourced its probiotic cultures from a new supplier, which lacked
rigorous quality control measures.
 The fermentation conditions allowed unwanted microbes to thrive, leading to
contamination.
