INTRODUCTION
You’ll agree with me that kids love chops and
snacks a lot, even adults do. I could
remember my love for puff puff few years ago, the
road side ones especially. I know a lot of people
have a similar experience.
A lot of people will love to make their snacks, chops
at the comfort of their home. It can be to satisfy
their taste buds, for their kids, family bonding and
so on but they have little or no knowledge on how
to go about it even
those who have the knowledge might not have
time sourcing for ingredients
as a result of their busy schedule.
You don’t have to always go through the stress of
always sourcing for ingredients which will be
always stressful, so why not prepare ahead the
time you will need to satisfy your taste buds.
In this book, I did not only write how to formulate
ready-mix but also the equipment, ingredients
needed, the directions involved on how to make
them and as well how to package them to last
longer for personal use and sales.

USED IN READY-MIX PRODUCTION
Measuring cups and spoons
Measuring cups and spoons are kitchenu utensils used for
measuring amount of
ingredients. Ingredients can be in liquid or solid/dry form.
There are different
shapes and colours, feel free to choose the one you like.
They are used to measure wet or dry baking ingredients.
Those who do not have measuring scale can use this cups.
Measuring scale
The use ofa a digital measuring scale gives a accurate and
precise measurement
of ingredients. It measures in bits. It can measure in grams,
ounces etc.

Sieve/Sifter
Sieve is used to filter off or separate clumps in dried and wet
ingredient such as flour, as well as to loosen or combine
ingredients together.
Mixing bowl
Mixing bowl is used for combining food ingredients. It can be
stainless, ceramic or glass
Whisk
Used for stirring ingredients evenly together.

CHAPTER TWO
INTRODUCTION TO BAKING INGREDIENTS
Flour
There are several kinds of flour .
All-purpose flour is your all around baking
assistant. You can use it pretty
much anything, including bread. However, bread
made from this type of flour
is usually softer in texture.
Whole Wheat Flour is typically used for breads
and is a good source of fiber. It
isn’t suitable for cakes and cookies and the baked
goods, it result will have a
coarse texture.
Cake flour, as it name implies is for making
desserts and cakes. Aside from
cakes, it is also used to make pie crusts, biscuits
and pastries.

Sweeteners
The most common type of sweeteners used in baking are
granulated sugar or
white sugar, brown sugar and honey.
Granulated sugar is used in most baking recipes. It sweetens,
softens and add moisture to your baked goods.
Brown sugar is a granulated sugar with molasses mixed
in,hence the
difference in texture. It aids with caramelization and helps
with the browning process.
Honey is a natural sweetener alternative that has certain
health benefits, such as lower glycemic index. It also holds
back the growth of mold in baked goods.

LeaveningAgents
Leavening agents are the magic ingredients that make your
baked goodies rise
when they are in the oven. Examples:
1. Baking powder is a leavening agent which makes your
batter to rise. It has a
built-in-acidic ingredients, so you don’t need to add anything
else unlike
Baking soda. Too much baking powder results in a bitter
tasting product, while
too little results in at tough cake with little volume.
Baking Soda is a premium sodium bicarbonate, and needs to
be paired with an
acidic ingredients like honey, chocolate, yogurt or buttermilk.
When used too
much, the cake will be soapy and coarse.
Yeast
Yeast is essential for fermentation, it allows dough
or batter to rise.

Cornstarch
Corn starch has a multiple purposes depending on the type
of dish it is being
used in. Corn starch is usually either a thickener or binder, but
can also be used as an anti-caking agent. It is good to use in
gluten free cooking instead of flour
to thicken sauces, custards or cake fillings.
Milk
The protein in milk softens, contributes moisture and adds
colour and flavor to
baked goods. It gives dough or batter strength and structure,
as well as adds
tenderness, flavor and moisture. It is available in different
types and each has
a specfic role it plays. There is Whole milk, Skimmed milk,
Evaporated milk etc.
Flavours
Flavours give a peculiar taste to batter or dough when
added. It comes in
different types e.g vanilla, chocolate, banana, strawberry etc.

PRODUCTION OF READY-MIXES
Puff Puff ready-mix
PuffPuff is a popular West African street snacks made from
yeast dough, shaped into balls and deep-fried till golden
brown. It has different variations at which it can be made to
yield as crumptious and palatable taste.
TYPES OF PUFF PUFF READY MIXES
Plantain Puff Puff ready mix
Spicy Puff Puff ready mix
Nutmeg spiced puffpuff ready mix
PLAIN PUFF PUFF READY-MIX
Ingredients:
3 cups of Flour
½ cup of Sugar
1 tbsp of Yeast
1 tsp of Baking Powder
2 tbsp of Milk
2 tsp of Vanilla essence/extract
Procedure:
Combine all ingredients in a sieve/sifter and sieve together
to get an evenly and fine mixture of all the ingredients.
Instructions on how to prepare
Wet ingredients needed
Luke warm water 7

Pour a desirable quantity of puffpuff mix in a bowl
Add lukewarm water and mix
Leave to rise for 1 to 2hours
Fry on medium heat till golden brown.
PEPPERED PUFF PUFF READY-MIX
Ingredients:
3 cups of flour
½ cup of sugar
1 tbsp of yeast
1 tsp of baking powder
1½ tsp of Chili flakes or scotch bonnet pepper
1 tsp of onion powder
2 tsp of vanilla essence/extract
Procedure
Combine all ingredients in a blender and blend together to
get an evenly and fine mixture of all the ingredients.
Wet ingredients needed
LukewarmWater
Directions
Pour a desirable quantity of puff puff mix in a bowl
Add lukewarm water and mix
Leave to rise for 1 to 2 hours
Fry on medium heat till golden brown.

NUTMEG SPICED PUFF PUFF READY-MIX
Ingredients:
3 cups of flour
½ cup of sugar
1 tbsp of yeast
1 tsp of baking powder
1 tsp of nutmeg
2 tbsp of milk
2 tsp of vanilla essence/extract
Procedure
Combine all ingredients in a blender and blend together to
get an evenly andfine mixture of all the ngredients.
Wet ingredients needed
Luke warm watter
Directions
Pour a desirable quantity of puff puff mix in a bowl
Add lukewarm water and mix
Leave to rise for 1 to 2 hours
Fry on medium heat till golden brown.

PANCAKE READY-MIX
Pancakes are flat, often thin and round prepared from flour
and other iwngredients often fried with butter or vegetable oil
in frying pan or gridle.

Put a pan on fire on a low-medium heat,grease the pan
with butter or vegetable oil.
Scoop the batter into the pan. Cook for about 60 seconds
or till the top starts to bubble and the sides is brown
enough, flip the pan cakes to the other side and cook for
a few seconds.

Ingredients
3 cups of flour
¼ cup of cocoa powder
½ tsp of lemon zest
2 tbsp of milk
¼ cup of sugar
Pinch of Salt
1 tsp of baking owder
2 tsp of vanilla essence/extract
Procedure
Combine all ingredients in a blender and blend together to
get an evenly and fine mixture of all the ingredients.
Wet ingredients
1 cup of milk
1 egg

Waffles are quite similar to pancakes and often can be made in to
different shapes. A waffle maker is used to make waffles, they come
in different shapes and sizes.

BUNS READY-MIX
Ingredients
3 Cups of flour
½ cup of sugar
2 tsp of baking powder
Pinch of salt
Procedure
Combine all ingredients in a blender and blend together to
get an evenly and ine mixture of all the ingredients.
Wet ingredients
1 egg
¼ cup of liquid milk
¼ cup of melted butter
Lukewarm water
Direction
Pour the ready-mix in a bowl, add the egg, butter, milk and
mix.
Add lukewarm water bits by bits to have a firm consistency
batter and not watery.
Cover and leave to rise for 40 minutes.
Scoop the batter or molded balls into vegetable oil.
.Fry on medium heat until golden brown.

CHINCHIN READY-MIX
Ingredients
3 cups of flour
½ cup of sugar
2 tsp of baking powder
Procedure
Combine all ingredients in a blender and blend together
to get an evenly and fine mixture of all the ingredients.
Wet ingredients
1 egg
¼ cup of liquid milk
¼ cup of melted butter
Lukewarm water
Direction
In a large mixing bowl, pour the chinchin ready-mix.
Add egg and melted butter, mix together until you get
a crumbly dough.
Add milk and mix till a smooth and non-sticky dough
is gotten.
Sprinkle some flour on a clean, flatsurface, then roll out
the dough.
Using a knife or pizza cutter, cut the dough into
desirable chinchin shapes and sizes.
Deep fry on a low to medium heat.

DOUGHNUT READY-MIX
Ingredients
500g of flour
120g of sugar
1tbsp of yeast
1tbsp of nutmeg
2 caps of flavorings
Procedure
Combine all ingredients in a blender and blend together to get
an evenly and fine mixture of all the ingredients.
Wet ingredients
2 eggs
1/2 cup of melted butter
1 cup of milk
LukewarmWater
Direction
Add the milk, butter and egg in a mixer bowl and whisk them
very well to mix properly.
Add flour gradually (mix with hand very well) knead for 5
minutes until sticky.
Transfer to a floured work surface and knead the dough for 10
minutes or till it is sticky and elastic. It should be soft.
Grease a container and place the dough in it, brush oil on the
dough and cover for about 1 hour or till it doubles in size.
Dust the surface with flour and roll out the dough to half an
inch thickness.
Dust some flour on a dough cutter and cut the dough with
dough cutter or any cutter of your choice.
Fry on medium heat till golden brown.

CAKE READY-MIX
Cake is sweet baked food made from a thick batter usually
containing flour,sugar and often eggs and a raising agent
such as baking powder. There are different types of cakes
but 3 major types will be discussed in this book.
1. VANILLA CAKE MIX
Ingredients
250g of flour
¼ cup corn starch
200g sugar
2 caps vanilla flavor
½ tsp baking powder
Procedure
Combine all ingredients in a blender and blend together to
get an evenly and fine mixture of all the ingredients.
Wet ingredients
3 eggs
1/2 cup of melted butter
1 cup of milk
Direction
In a mixing bowl, add all the wet ingredients
Add 500g of vanilla cake mix and whisk together
properly.
Prepare the cake pan and pour the batter into the cake
pan.
Bake till an inserted toothpick comes out c from the
cake.

Directions
Preheat the oven to 180°C.
Grease 9-inch cake pan with butter and dust with flour.
Add the eggs, buttermilk, warmwater, vegetable oil in a
mixing bowl and mix properly.
Pour 500g chocolate cake ready-mix into the wet
ingredients and mix properly until very smooth.
Pour the batter into the pan and bake for 30-35 minutes or
until the cake meets the toothpick test.
Cool for 15 minutes, then turn out the cake and allow to
cool.

2. CHOCOLATE CAKE MIX
Ingredients
3 cups of flour
¼ cup of cornstarch
1 tsp of baking soda
1tbsp of baking powder
1/2 tsp of salt
1 cup of cocoa powder
2 cups of sugar
½ tsp of chocolate flavor
2 tsps of vanilla extract
Procedure
Combine all ingredients in a blender and blend together to get
an evenly and fine mixture of all the ingredients.
Wet ingredients
3 eggs
½ cup vegetable oil
1½ cup of buttermilk
1 cup of warm water
How to make buttermilk
½ cup of milk
1 cup of water
1 tbsp of vinegar or lemon juice
Instructions
Mix all the ingredients together and set aside to curdle.

Preheat the oven to 180°C.
Grease 9-inch cake pan with butter and dust with flour.
Add the eggs, buttermilk, warmwater, vegetable oil in a
mixing bowl and mix properly.
Pour 500g chocolate cake ready-mix into the wet
ingredients and mix properly until very smooth.
Pour the batter into the pan and bake for 30-35 minutes
or until the cake meets the toothpick test.
Cool for 15 minutes, then turn out the cake and allow to
cool.

3. RED VELVET CAKE MIX
Ingredients
2½ cup of all-purpose flour
¼ cup of cornstarch
2 tbsp of cocoa powder
1 tsp of baking oowder
1 tsp baking soda
1½ cup of flavor
¾ tsp of salt
2¼ cups of sugar
2½ tbsp of red food coloring
Procedure
Combine all ingredients in a blender and blend together to get an
evenly and fine mixture of all the ingredients.
Wet ingredients
2 eggs
1 cup of vegetable oil
1 cup of buttermilk
How to make buttermilk
½ cup of milk
1 cup of water
1 tbsp of vinegar or lemon juice
Instructions
Mix all the ingredients together and set aside to curdle.
Directions
In a mixing bowl, add all the wet ingredients and mix.
Add 500g of red velvet cake mix and mix together till an evenly
mixture is achieved.
Prepare the cake pan and pour the batter into the cake pan.
Bake till an inserted toothpick comes out clean from the cake

BRANDING,LABELLINGANDPACKAGING.
BRANDING FOR SALE
Branding is the process of sending or conveying a strong and
positivemessage and information of your business, product or
services toprospects and customers.
Branding makes a business look trustable. It calls the attention of
customers.
Here is how to go about how to brand a business.
Create a brand name which is easier to pronounce and can
easily be remembered. Keep it short. Your brand name can
be the acronym of your name,shortening of your name etc.
Make a logo. Your logo should describe what you do at the
absence of yourbrand name. it must xplain what your brand
is all about. The colour must be in line with the business. Every
business has a colour that stands best for them, so colours
that will be used to decorate must be a catchy colour to the
eye. I am not saying a flashy colour should be used but rather
a catchy one. Consult a very good graphics designer.
Form a motto that goes in line with baking, eating, catering
etc. Motto speaks about your objective or goals to the
customers or prospect. It makes them know what they intend
to get from your business.
Labelling enables product or service identification. It carries or
contain information about the product. A good label must attract
and subscribe consumers to you anytime.
Labels carries required information. A label must convey the
following information:
The name of the product,
The net weight,
Serving size,
List of ingredients (not all the ingredients),
Nutritional information preserving

Date of manufacture and expiry date.
The manufacturer’s name and address,
Nafdac number if available.
Packaging is a way of enclosing or preserving a food product
from a biological and chemical substances, moisture content
and as well as a means of delivering to customers.
Packaging is an important aspect in food packaging. It is so
crucial that when packaging goes wrong, the product will go
bad even if the product is with best among other products.
Products won’t sell if they can’t get to the distributor, store or
consumer safely without any damage. It needs to be packaged
in such a way that it will make distribution easier, products will
be protected against micro organisms etc.
There are different types of packaging packs that can be used
to package ready mixes. Every food item has its own shelf life.
The aim of storage is to maximize the shelf life and safe food, so
a high-quality packaging material should be used.
Factors to consider when choosing packaging
packs
Quality ofr eady-mix: All ingredients to be used in making
the ready mixes should be of high quality. Ensure the yeast,
baking powder and baking soda are of earliest production
before purchasing them, so the shelf life of the ready-mix
will be maximized.
Moisture content: most food items are prone to spoilage
when the moisture content is high, thereby making it easy
for bacteria attacks. Ensure all ingredients to be used are
very dry and has not come in contact with water in any way.
Temperature: Some ingredients used might require to be
stored at room temperature or lower temperature to
preserve their nutritional values and how active they are e.g.
yeast and some might require a higher temperature.

Quality of the package packs: Not all package packs are
safe for packing food items. Ensure to always ask and take
a sample for checking before purchasing. Food graded
package packs should be gotten so ready-mix will be
healthy for consumption.
There are different types of packaging packs ranging from
plastics, ars, Ziploc bags, stand on pouches, paper packs
etc.
.Most people make use of stand on pouches becuse of its
affordability and and Iwill advise, as a newbie in the
business to also go for stand on pouches. After then it
depends on how much your target audience can afford,
so always ensure to make a research before commencing
on anything regarding your business. Check how your
competitors are doing it, where do they lack?, check the
loop holes and you find solution to them and include them
into your business.

CHAPTER FIVE
DO’S AND DON’TS IN READY-MIXES PRODUCTION
Ensure quality ingredients are sed. Make sure they are free from
any sort of infestation.
All ingredients to be used to make the ready mixes must be very
dry, so it won’t promote bacterial attacks.
Use of digital scale or measuring cups and spoons should be
used.
When using measuring cups or measuring spoons, ingredients
should be levelled and not heaped because that will lead to
increase in the measurement. A spoon or the bland side of a
knife can be used for levelling.
Food graded packaging packs should be used.
Pouches of sizes 250g, 500g, 750g and 1kg are the common size
of pouches used.
Do not place pouch on the scale before adding the ready-mix.
The measurement won’t be accurate.
Ready-mix should be poured bits by bits into the pouch and
measured till desired size is gotten.
A ziploc comes with the pouch but it is not advisable to seal
using just the ziploc so a sealing machine will be needed to seal
the opening so the ready-mix will be safely delivered to
consumers and that makes your brand to be trusted.
All ingredients/readymixes must be kept at room temperature
and away from sunlight.
Avoid wrong use of pouch sizes. Always buy pouches that allows
your product to sit up and not sink downward or look physically
compressed when it is not. So always use sizes that fit.
