Red velvet cake
INGREDIENTS
3 cups flour
2 cups Sugar
2 Tbs cocoa powder
2tsp baking powder
1tsp bicarbonate of soda
3 large egg
300ml cooking oil
300ml sour milk
1 tbs vanilla essence
1 tbs vinegar
2 tbs red food colouring
1/2 cup hot coffee but must be set aside to cool a little.
METHOD
Preheat oven at 160 degrees
Beat oil and sugar using an electric mixer
Add the eggs one at a time followed by vanilla essence
In another bowl mix sour milk with food colouring. Add this to your wet
ingredients and give it a quick stir with a wooden spoon
Mix sifted flour, cocoa and baking powder, baking soda then add to your wet
mix then add vinegar and stir just a little lastly add cooled coffee. Use any
wooden spoon to stir ingredients AND finish off with any electric mixer till
batter is smooth
NB: do not over mix your batter.
CHOCOLATE CAKE
3 cups castor sugar
1 cup cooking oil
4 cups flour
4 teaspoons baking powder
1/2 teaspoon baking soda
1 cup baking Cocoa powder
Pinch of salt
1 tablespoon vanilla essence
1 teaspoon chocolate essence
1 teaspoon coffee
2 cups buttermilk
2 cups boiling water
4 large eggs
METHOD
Sieve all dry ingredients (flour ,baking powder ,baking soda ,cocoa , salt )
Mix castor sugar and cooking oil
Add eggs and mix
Add essences
Dissolve coffee into 1 cup of boiling water
Add both cups of water (1 plain 1 with coffe)
Add half dry ingredients and fold in
Add the other half and buttermilk and fold in
Lightly mix with mixer
grease and dust tins
Bake at 180 degrees for 30-35 minutes

- 500g margarine
- 2 cups castor sugar ( a cup is 250g)
- 5 cups cake flour
- 10 large eggs
- 5 teaspoons baking powder
- 2 cups butter milk (mabisi)
- 1 table spoons vanilla essence

- beat your castor sugar and margarine till light and fluffy.
- In a separate bowl break your eggs and bit them slightly.
- In a separate bowl sieve all your dry ingredients ( flour and baking powder)
- Pour your eggs in the mixture of ( margarine and castor sugar)
- Add 1 tablespoon of vanilla essence in the mixture.
- get half cup butter milk and half dry ingredients put in the mixture and fold
in with a cooking stick.
- Add the remaining half of butter milk and dry ingredients and fold in then
mix with a mixer for less than a minute .
- Grease pans with butter or oil and line with baking paper or dust with flour.
