Read and understand the text below about “Waknatoy”, a
famous dish in Marikina City.
“WAKNATOY”
(Marikina’s Version of Menudo)
Waknatoy, also called Marikina menudo, is a Filipino pork stew with
pickles. It is a variant of the Filipino menudo stew originating from
Marikina City. It is made with cubed pork and pork liver with sausages
(typically Chorizo de Bilbao), red and green bell peppers, tomatoes, garlic,
onions, and distinctively, pickle relish, cooked in a tomato-based sauce
with salt, pepper, fish sauce, and bay leaves. Waknatoy does not
traditionally include other vegetables like potatoes and carrots, like
menudo, but they can be included.
According to the history of Waknatoy’s origin or beginning here in
Marikina, it was said that the Marikeños would almost every day serve the
early Chinese settlers this kind of menudo dish. And since they’re already
tired eating it, they would just simply try hard to say: “Waknatoy,
waknatoy!” or in our Filipino language it is “Wag na to, wag na to!”. And
that is how our Marikina version of menudo came to be called “Waknatoy”.
And up until this day, Marikeños still cook this dish. This is how it
is cooked:

INGREDIENTS:
✓ cubed pork
✓ pork liver
✓ Sausages (typically Chorizo de Bilbao)
✓ red and green bell peppers
✓ tomatoes
✓ garlic
✓ onions

✓ fish sauce
✓ bay leaves
COOKING TIME: 45 minutes
PROCEDURE:
1. Marinate pork in pickle juice, 2-3 tbsp light soy sauce, about 1 tbsp
rock salt and a dash of white pepper for about 1 hour or longer.
2. Sauté in a pan (kawali) with the oil/fat, sliced chorizo, garlic, onion,
marinated pork.
3. Let boil then simmer until meat is cooked and mixture starts to
thicken. (This is what they call “sangkutsado”)
4. Add the liver and let it cook for a minute or two.
5. Add sausage, tomato sauce, tomato ketchup, tomato paste and
pickles. Toss and turn until sauce are well combined. Continue to
simmer until sauce is thickened. It should look oily and sticking in
the wok as you toss all the ingredients. (nagmamantika at halos
naninikit na sa kawali ang itsura.)
6. Add red bell pepper, bay leaf and the potatoes. Add little amount of
water, season with patis to taste. Continue to cook until it becomes
very saucy.
7. Add some grated cheese to improve the flavor.
8. Serve hot and enjoy!

makes a paragraph. A paragraph expresses a unified or thought.
As a review of that lesson, answer this Activity.

What Is It
The short texts/paragraphs which you have read are
examples of different text types. They differ in terms of their
structure, purpose, and language features.
As you have read earlier, there are different text types. Here
are three of them for you to understand and learn.
1. Texts that gives information about a topic are called
informational texts.
Examples of this are: news articles, travelogues, feature
article, content area materials like Mathematics, Science,
etc.
2. While some texts tell the procedure, directions, or steps on
how to do something. These are called procedural texts.
Examples are: recipe, steps in solving word problems,
dance steps
3. Texts that show a list are called texts that enumerate.

Examples are: list of ingredients, list of materials needed,
list of names or any kind of texts that show a list of

In the two texts that you have read in What’s New you’ll see
that Text A gives information about what parents will do to
communicate with their pupils’ class adviser. It also mentioned
an information about the teachers name and contact data. It is
therefore an example of informational text. While on the other
hand, if you will try to look back to TEXT B and recall your answer,
the things mentioned there were the activities which the siblings
Mario and Maria did to help their parents. You were even asked to
list down the four things which they did. Now it gives you a clue
that TEXT B is an example of a text that enumerates, because it
lists down the activities/thing that Mario and Maria did.

The History of Marikina's Shoe Industry: Philippine Art, Culture and
Antiquities. Marikina was founded three hundred nighty-three years ago when the
Jesuits arrived in 1630. They called the area Jesus dela Peña (Jesus of the Rocks). It
was later called Mariquina and a parish was established there in 1687.

Marcelino "Marcy" Reyes Teodoro (born August 2, 1970) is a Filipino politician
and at present the Mayor of Marikina. He previously served as member of
the Philippine House of Representatives as representative of the 1st District
of Marikina City.
When he was still a Congressman and before becoming our City’s mayor, He
proposed and authored bills/law relating to education. This is because he values
education very much. Two of the bills which he proposed are: Computer Education
Act of 2007 and Free Public Pre-school Education Act.
The Computer Education Act of 2007 aims to establish compulsory computer
education for elementary and high school curricula and for other purposes. The bill
calls for the inclusion of computer education in the curriculum of public and private
elementary and high schools. On the other hand, the Free Public Pre-school Education
Act is a measure which provides for free public pre-school education to all qualified
children to promote quality education in all levels.

2. If there is one thing that is unique about Las Piñas, it is the
Bamboo Organ, which is considered a Philippine National
Treasure. On November 24, 2003, it was given this
recognition by the National Museum of the Philippines since
“it is the only 19th century Bamboo Organ in the Philippines
that has survived and is still functioning.” This unique
musical instrument is composed of 1,031 pipes, and 902 of

3. Making Basic Slime
In one of the bowls, mix ¼ cup of water and ¼ cup of white
school glue. If you would like colored slime, add a few drops of
food coloring to the solution. In another bowl, mix ½ tbsp Borax
with ½ cup of water and stir until the borax has dissolved. And
then, add the borax solution to the glue solution and mix. You
can also pour the solutions into a re-sealable plastic bag and
mix. A slime-like texture should begin to form immediately.
Continue to stir and knead until you get the consistency you

PASSAGE A
EVERLASTING
(Marikina-Style Meatloaf)
Everlasting, is also one of the notable delicacies of
Marikina which is a must try for people from other places who
visit our place. It is also known as the Marikina meatloaf;
a Filipino steamed meatloaf originating from Marikina City. It
is made with ground pork, Chorizo de Bilbao sausages, carrots,
bell peppers, raisins, pickle relish, tomatoes, onions, and eggs.
It is similar to the hardinera meatloaf of Quezon and is also
traditionally steamed in an oval-shaped tin mold known as
a llanera (or lyanera).

This is how it is cooked:
o In a wide pan over medium heat, heat oil. Add hotdogs
and cook for about 1 minute or until lightly browned.
o Add onions and garlic and cook until softened.
o Add ground pork and cook.
o Add carrots and bell peppers and continue to cook,
stirring regularly, until meat is lightly browned.
o Season with salt and pepper to taste
o Add tomato sauce and water. Bring to a simmer.
o Remove from heat and allow to cool completely.
o Add beaten eggs and stir until well-combined.
o Brush the bottom and sides of three llaneras with softened
butter. Line each with banana leaf cut in oval shape large
enough to cover the bottom of the molds and lightly brush
with butter.
o Decorate the prepared llaneras with boiled egg slices,
pineapple slices, bell pepper strips, and carrot florets on
top of the banana leaves.
o Spoon pork mixture into the molds. Pack the mixture well
and smooth top. Cover each llanera tightly with aluminum
foil.
o Steam for about 1 hour to 1 1/2 hours or until the meat
mixture is set.
o Remove from heat and let stand for about 3 to 5 minutes.
o Invert meatloaf on a serving platter and peel banana leaf.
o Cut into desired slices and serve with ketchup.

PASSAGE B
The Philippine Eagle is the National bird of our country. It
is a giant bird of prey that can only be seen in 4 islands in
the Philippines- Luzon, Samar, Leyte and Mindanao. It is
considered to be one of the largest and most powerful among
forest raptors.
Though the Philippine Eagle may spend time along forest
edges, and has even been observed in areas where the forest has
been logged, this species is a true forest raptor and relies on
pristine primary forest in which to hunt, build its nest and raise
its young. It can be found in habitat as low as sea level to around
5,900 feet (1,800 m). However, much of this species' lowland
habitat is being destroyed - mainly due to logging and conversion
of forest land into agricultural fields. This is why they are already
endangered and only a few of them are left.
