Juice- concentrated form of the fruit.
Drink- diluted form of the fruit.
Types of menu
Static- on this menu the same dishes may be offered every-day. Eg. kfc
Cyclic menu-this type of menu offers dishes that may change every day over a
one-week or two-week period and then repeated in that same order.
a la carte- this means that each item is listed and priced separately on the menu. The
customer selects the items he/she wishes.
table d’hote- when a selection of complete meals is offered at a set price.
RULES TO FOLLOW WHEN WRITING MENUS
· Dishes should be written in the order in which they will be served.
· Capitalize the first letter of each item.
· Do not repeat food in menu items. (eg fish in appetizer, main dish and dessert)
· Choose desserts that blend with the season.
· Choose a variety of cooking methods.
· The methods of cooking are always written in the past.
· Name each dish to stimulate appetite. (Caribbean fruit cup, island fresh green vegetables)
· Separate courses using a line
