 Amino Acids - Building Blocks of Protein
 Amino Acids exist as Zwitterions in aqueous solution
 Zwitterions – Have large dipole moments. Soluble in water but insoluble in
hydrocarbons. Amphiprotic.
 Peptide Bond – Links amino acids together.
 Amino acids make up polypeptides. Polypeptides make up proteins. Smallest to largest.
Four Different levels of protein organization accordingly
 Amino Acids – Primary Structures
 Protein Chains – Secondary Structures
 Three-dimensional Protein – Tertiary Structures
 Protein Aggregates - Quaternary Structure
Function of Proteins
 Can serve as structural components in animal tissues and as catalyst in various
biological process

Carbohydrates
 Simple Sugars- Building Blocks of Carbohydrates
 C_Nh_2no_n- Formula of Simple Sugar or monosaccharides
 Glycosidic – Links carbohydrates together
 Carbohydrates are polyhydroxylated aldehydes and ketones commonly called as sugars.
Classified as simple or complex sugars.
 Carbohydrates consist of carbon, hydrogen, and oxygen
 “Carbo” means carbon and “Hydrates” means water.
