consumed unless it is diluted with water and sweetened by sugar (Chen,
2009). Extraction is the most principal technological step in the
manufacturing and production of fruit juices, therefore, food scientists
and technologists must have a deep understanding of the different steps
involved in fruit juice extraction in order to produce a satisfactory
quantity of fruit juices with high quality. This chapter covers the main
