The production of olive oil involves several processes, from harvesting to bottling. First,
the olives are picked, either by hand or by machine, usually between October and
January. After being harvested, they are cleaned to remove impurities such as leaves and
twigs. The olives are then crushed or ground into a paste that includes the pulp, skin,
and stone. This paste is then slowly mixed, in a process called malaxation, to help bind
the drops of oil together. The oil is extracted either by cold pressing, a traditional
method, or by centrifugation, a more modern one. After extraction, the oil can be
filtered to remove impurities, or left unfiltered, depending on the producer's choice.
Finally, the oil is stored in stainless steel tanks to preserve its quality until it is bottled
and distributed.
