The Glasgow Kiwanis Swim Team won the State B titles now under his belt. L-R Front: Aurora Markle,

So here it is, Mayer Jones’ “Jo’s” Corner Meatloaf: LAST WEEK THE HEN HOUSE SALE ROOM

• 1 egg, slightly beaten (or beat the crap out of it
like Johnny Jones probably did to opponents on
the football field during his glory days, but we’ll
go with slightly beaten)
• 1 teaspoon salt
• 1 teaspoon dry mustard
• 1/8 teaspoon pepper
• 1-1/2 pounds ground beef
• 1 can of golden mushroom soup (they certainly
don’t give this away any more)
• 1/4 cup red cooking wine
Combine cereal, milk, onion, egg, seasonings
and Worcestershire sauce (and honestly, there ain’t no
substitute for Lee & Perrins). Let stand for about five
minutes and beat well. We hope you haven’t put your
meat in yet.
Okay, five minutes or so have passed, now it’s time
to add the ground beef. Shape into a loaf in a greased
shallow baking dish, bread loaf pan, whatever, but if
you’re using hamburger with a little more fat content,
definitely go with the baking dish or your meat loaf will
be swimming in grease.
Then bake that bugger for 350 degrees for an hour.
Meanwhile, some time in there, heat the golden
mushroom soup and cooking wine in a small saucepan.
When that loaf is done, let it set for a few minutes before
slicing, then slather that gravy all over it. I’m telling
you, Mayor Johnny’s meatloaf is better than Denny’s in
Billings on any given day!
The recipe says it “makes 8 servings”, but I think
the Fort Peck Mayor and I would beg to differ! Might
want to double the whole recipe because the next day’s
meat loaf sammiches are incredible.
But I had never thought of using Rice Krispies, and
you talk about a tender meatloaf. Now what will I do
with the rest of the box? Guess we might have to make
another meat loaf!
