INTRODUCTION
Vigna mungo, also known as black gram, urad bean, or black matpe, is a bean grown
in South Asia. Like its relative, the mung bean, it has been reclassified from the
Phaseolus to the Vigna genus.. Consuming black grams (whole) may provide
prebiotic health benefits and might be regarded as potential functional food. In
excess, reactive oxygen species (ROS) can damage cells like proteins, lipids, and
DNA, resulting in conditions like cancer, neurodegenerative diseases, and
atherosclerosis. Urad dal may show liver protective and kidney protective
properties. These properties might be due to components like phenolics, tannins,
flavonoids, and phytic acid in urad(Bodhare, 2023).

The protein content determination process for Vigna mungo tofu involves the use of the digestion and distillation method. In this method, a 1g sample of tofu is digested in a flask with a catalyst, followed by distillation. A set amount of NaOH is added to the distillation tube, causing ammonia to be released. The amount of ammonia collected is used to determine the nitrogen content, which is then used to calculate the protein content of the tofu . This calculation is crucial as it provides an indicator of the tofu's nutritional value.

Developing Vigna mungo tofu as an alternative to soybean tofu presents several challenges, including addressing soy intolerance and ensuring comparable nutritional and sensory qualities without compromising health benefits. Soy intolerance can manifest as allergies or other digestive issues, which Vigna mungo tofu aims to mitigate . Additionally, comparative analysis through sensory tests and physicochemical assessments like pH, microbial, and proximate analysis is necessary to ensure Vigna mungo tofu meets or exceeds the sensory and nutritional profiles of soybean tofu . These challenges can be addressed by carefully designing experiments to optimize formulations and by conducting comprehensive testing to validate the health advantages and consumer acceptability of the final product.

Soy consumption during childhood and adolescence is associated with an increased chance of breast cancer later in life, as per the concerns stated in the document . Vigna mungo could serve as an alternative due to its potential health benefits, such as its prebiotic properties and its absence of soy-specific compounds that might contribute to the risk . As an alternative, Vigna mungo tofu could offer similar nutritional benefits without the associated risks of prolonged soy consumption, making it a viable option for addressing dietary needs without increasing certain health risks.

Consuming Vigna mungo, also known as black gram or urad bean, may provide several health benefits due to its nutritional components. It contains phenolics, tannins, flavonoids, and phytic acid, which may contribute to its liver and kidney protective properties . Additionally, as a potential functional food, black grams might provide prebiotic health benefits. The presence of these compounds could also offer antioxidant benefits, potentially preventing cell damage from reactive oxygen species (ROS) and reducing the risk of conditions like cancer, neurodegenerative diseases, and atherosclerosis .

Conducting water and oil activity tests on Vigna mungo tofu is beneficial for understanding its textural properties, shelf life, and sensory qualities. These tests help in assessing the changes in texture, color, smell, and weight, which are important for product consistency and quality control. The process involves maintaining the tofu at a temperature range of 30-50°C, immersing it in distilled water or oil for fixed periods, and observing changes after each interval . These observations inform adjustments needed in the formulation process to optimize the tofu's stability and consumer desirability.

Sensory tests are crucial when developing alternative protein products like Vigna mungo tofu to ensure that the product is acceptable to consumers in terms of taste, smell, and texture, which are key factors influencing consumer choice and satisfaction. The methodology used for sensory tests in the study at Polytechnic Nilai involves comparing the best formulation of Vigna mungo tofu with soybean tofu regarding these sensory attributes . This comparative analysis helps identify the most favorable formulations and make necessary adjustments to improve the product's marketability and consumer acceptance.

The study tests the hypothesis that there is a significant difference in pH, microbial test, proximate test, and sensory test results among the four formulated Vigna mungo tofu varieties . The expected outcomes focus on determining the best formulation based on objective tests—pH tests, water and oil activity, microbial analysis, and proximate analysis—as well as subjective evaluations through sensory tests regarding taste, smell, and texture differences compared to soybean tofu . These expected outcomes aim to confirm whether Vigna mungo tofu can be optimized to match or surpass the qualities of conventional tofu variations.

The process of homogenization and filtration impacts the pH testing of Vigna mungo tofu by ensuring a uniform mixture from which accurate pH measurements can be obtained. Homogenization reduces particle sizes and creates a consistent mixture, which is then filtered to remove large debris, ensuring that the pH meter reads a representative sample of the tofu's liquid phase . This method helps achieve precise and reliable pH results crucial for determining the tofu's quality and consistency.

The budget allocation for the development of Vigna mungo tofu, totaling RM 117.59, suggests that the project is relatively low-cost, making it potentially scalable for wider production if initial results are promising. The main expenses include the initial purchase of Vigna mungo (RM 29.70), tofu press makers (RM 53.58), and some necessary consumables like cheesecloth, aluminum foil, and containers . This careful budgeting indicates an economically efficient approach to explore the viability of this alternative protein source and implies feasibility for expansion if the product proves successful.

The development of Vigna mungo tofu addresses dietary limitations of soy products by offering an alternative protein source for individuals with soy intolerance or allergies, which can manifest as digestive issues or potential thyroid function alterations in iodine-deficient individuals . Furthermore, concerns about soy consumption in increasing breast cancer risks during critical developmental periods are mitigated by using Vigna mungo. This alternative tofu provides similar health benefits without these associated risks, offering a plant-based, protein-rich option suitable for diverse dietary needs .
