CHAPTER 1

INTRODUCTION

Food safety and personal hygiene are crucial aspects of the hospitality
industry as they play a vital role in protecting the health of the consumers and
maintaining the quality of the food served. As such, they are important topics of
study for technical vocational livelihood home economics students pursuing a
career in the hospitality industry. The knowledge and skills acquired in these
areas can have a significant impact on their career path, ensuring they can
implement best practices and minimize potential risks.

Food safety involves the measures taken to ensure that food is free of
harmful microorganism that can cause illness or death. It is, therefore, important
that technical vocational livelihood home economics students have in-depth
knowledge about the different methods involved in food safety to ensure that they
can make informed decisions in their career paths. The implementation of food
safety measures ensures that consumers have access to safe food, minimizing
the risks of food-borne illnesses.

Personal hygiene is equally important in promoting food safety. Personal

hygiene measures, such as washing hands regularly, wearing clean attire, and
maintaining personal cleanliness helps in preventing the spread of harmful
bacteria and other microorganisms that can cause food poisoning. Technical
vocational livelihood home economics students should learn about the
importance of personal hygiene to reduce the risks of cross-contamination while
also protecting consumers and their reputation.

Food safety and personal hygiene knowledge in technical vocational

livelihood home economics students can impact their career path by promoting
responsible and safe risk management. By understanding the principles of food
safety, students can implement preventive measures and assess potential risks
to ensure that food is safe to consume and meet the international food safety
standards. A career path in the hospitality industry and foodservice can involve
food production, transportation, storage, preparation and service. Hence,
technical vocational livelihood home economics students can make informed
decisions at all stages to ensure safety for consumers and themselves.

In addition, having food safety and personal hygiene knowledge can

significantly influence the perception and reputation of the student’s career path.
Consumers are more aware and concerned about food safety hazards and
regulations. A student’s knowledge about food safety measures, procedures, and
implementation inspires trust and confidence with the consumers. The ability to
understand and adhere to food safety principles often enhances the reputation of
Technical vocational livelihood home economics students in the hospitality
industry, which can lead to better job prospects.

Further, implementing best practices in food safety and personal hygiene

can reduce the risk of legal liabilities and increase compliance with food safety
regulations. Technical vocational livelihood home economics students with an
understanding of food safety standards can identify compliance gaps in the
industry and advocate improvements in food safety measures, thus enabling the
industry to uphold food safety standards.

Moreover, Technical vocational livelihood home economics students with

knowledge of food safety and personal hygiene are equipped with skills relevant
to their day-to-day activities. They can efficiently manage food handling, storage,

4

preparation, and service operations in a safe and hygienic manner. These skills
can make the students stand out in their field, ultimately creating a positive
impact on their career path.

As Technical vocational livelihood home economics students progress in

their career path, food safety and personal hygiene knowledge can set them
apart from their peers. By applying food safety principles and personal hygiene
standards, they can manage and maintain food safety consistently and
systematically. They can play a leadership role in reinforcing safe food habits and
creating a culture of food safety.

REVIEW OF RELATED LITERATURE

This part includes related literature that was discovered by researchers’ in-
depth examination of various websites and sources with regards to the impact of
mathematics subjects on stem students’ academic performance. This section
reviews the foreign and local literature on the given topic to help us comprehend
this study better.

FOREIGN LITERATURE
At the present time, health is one of the main concerns and a key public
health and food security issue.
The food industry is an increasingly important component of the national food-
safety system. Though, a number of studies have demonstrated a lack of
correlation between food hygiene training and improvement in
food hygiene behaviors (Howes, McEwen, Griffiths, & Harris, 1996;
Powell, Attwell, & Massey, 1997).

According to World Health Organization, every year, more than one-third of

the total population in developing countries are affected by foodborne diseases.
A foodborne disease is mainly caused by the oral ingestion of viable
microorganisms (infection) or of the toxins they produce (intoxication) in sufficient
amounts to develop pathology (Souza, Silva, & Souza, 2004).

Furthermore, researchers mentioned that data on risk factors for

foodborne diseases imply that most outbreaks result from
improper food handling practices.

Colegio de San Gabriel Arcangel, Inc.

City of San Jose del Monte, Bulacan, Philippines

In an independent study indicated that food handlers play a

major reason in contaminating food (Campos et al., 2009), and the most of food
poisoning cases occur in schools and universities in
worldwide (Sani & Siow, 2014).

There are diverse reasons to foodborne illnesses. Decreased public

awareness, food contamination, cross-contamination, improper temperatures
during storage and food preparation, inadequate food handling and poor
personal hygiene are among the most important reasons that cause foodborne
diseases. In addition to these contributory factors, the lack of applying the
acquired knowledge is highly operative (Ehiri & Morris, 1996).

Additionally, food borne illnesses impose economic costs on society and

reduce the quality of life for those falling ill (Archer & Young, 1988)

The Infectious Intestinal Diseases survey (1996) showed that this type of
illness in the population is a much higher distribution than other reasons (9.4
million cases); the data also shows that one in five persons suffer from a
gastrointestinal infection (Wheeler et al., 1999; Tompkins et al., 1999).

Many outbreaks of foodborne diseases are poorly investigated, if at all,

because these skills are unavailable or because a field investigator is expected
to master them all single-handedly without having been trained (WHO, 2008).

European Food Safety Authority (EFSA, 2010) reports that around of

48.7% of foodborne illness are associated with food ser- vices in the food
premises. World Health Organization (WHO, 2007) reported that in the year 2005

alone, nearly 1.8 million people died result to diarrheal cases globally, and the
most of them consumed contaminated food and water. According to World
Health Organization, every year, more than one-third of the total
population in developing countries are affected by foodborne diseases.

Bad personal hygiene is causing a number of other types of illnesses, such

as meningitis, septicaemia, neurological conditions and hepatitis. Moreover, hand
hygiene plays an important role in the control of spread of infectious diseases.
Consequently, in order to reduce foodborne illnesses it is crucial to gain an
understanding of the interaction of prevailing food safety beliefs, knowledge and
practices of food handlers (WHO, 2000).

Findings generally show significant differences between knowledge and practice

DEFINITION OF TERMS

FOOD SAFETY – is used as a scientific method/discipline describing handling,

preparation, and storage of food in ways that prevent food-borne illness. The
occurrence of two or more cases of a similar illness resulting from the ingestion
of a common food is known as a food-borne disease outbreak.

PERSONAL HYGIENE – is important to prevent food poisoning. When handling

food, wash your hands thoroughly and often. If you are sick, do not go to work,
because you can contaminate food more easily. Food handlers should be
properly trained in safe food handling.

CAREER PATH – the series of jobs or roles that constitute a person’s career,
especially one in a particular field.

FOOD SERVICE- Foodservice is all about food and beverages that are
consumed out of the home. Consumers visit foodservice outlets for a number of
reasons, such as the added convenience, to sample new tastes and flavours, to
celebrate and to socialise. Foodservice covers a wide range of eating occasions
and outlets: Hotel. Restaurants

MICROORGANISMS – The tiniest life forms are bacteria, yeasts, molds, and
viruses, termed “microorganisms” because of their size (micro meaning small
and organism meaning living being)

16
Colegio de San Gabriel Arcangel, Inc.

FOOD BORNE ILLNESS - Foodborne illness (food poisoning) is caused by

consuming contaminated food, beverages, or water and can be a variety of
bacteria, parasites, viruses and/or toxins. Many of these pathogens can be
acquired through more than food, beverages, or water.

CHAPTER 2

METHODOLOGY

This chapter presents the research methodology of the study, which includes the
research design used, study respondents, sample study design, instrumentation,
data collection, methods, and the gathered of researchers related to the
experimental process. This method was tested with the study of grades 11 and
12 at Colegio de San Gabriel Arcangel Poblacion Campus in SY 2022–2023.

RESEARCH DESIGN

The study adopted a phenomenological research design. This approach

popularly used to study lived experience, gain a deeper understanding of how
human being think, and expand a researcher’s knowledge about a phenomenon.
This research design is especially appropriate in the current study to evaluate the
current conditions of the study scope to ensure quality research output.

- Phenomenological research is a qualitative research method that aims to

understand the lived experiences of participants with respect to a
particular phenomenon. It involves studying the subjective experiences of
individuals and exploring the meaning they attach to those experiences.
-
- In the context of our research, a phenomenological approach may be
appropriate to explore the experiences of Grade 11 Technical Vocational
Livelihood Home Economics students with respect to the impact of food
safety and personal hygiene knowledge on their path to career.
-
- This approach can be used to gain insight into how grade 11 TVL/HE
students perceive the importance of food safety and personal hygiene,
what kind of impact they think this has on their implementation on the
pathway of career.

18
Colegio de San Gabriel Arcangel, Inc.
Founded 1993
City of San Jose del Monte, Bulacan, Philippines

- In general, a phenomenological approach may be appropriate for our

research, as it will allow us to gain a deeper understanding of how food
safety and personal hygiene knowledge affect the path of career of Grade
11 Technical Vocational Livelihood Home Economics students from their
personal perspective.

RESPONDENTS OF THE STUDY

- There were 6 boys and 6 girls respondents for this study, all the
respondents were chosen from colegio de san gabriel arcangel grade 11-

SAMPLING DESIGN

- Convenience sampling was used by the researchers. Convenience

sampling, according to kassiani (2022), convenience sampling is a non-
probability sampling method where units are selected for inclusion in the
sample because they are the easiest for the researcher to access. This
can be due to geographical proximity, availability at a given time, or
willingness to participate in the research. Sometimes called accidental
sampling, convenience sampling is a type of non-ramdom sampling. The
study’s data collection will be simple because the number of respondents
is manageable.
