1.1 INTRODUCTION :-
Roti is considered to be the most critical and widely
consumed item in all Indian cuisines. The process of making roti
includes first making wheat dough and then hand pressing as
well as manually rolling the dough to achieve desired roti, post
which it is flipped onto a pan.

Well we here automate the central part of roti making that is

pressing and rolling it to get a flat roti. We here use a press
based mechanism to achieve the desired operation. The system
makes use of 3 plates with a high torque motor, 2 Support rods,
a screw mechanism to develop the machine.

1
1.2HISTORY OF ROTI MAKING MACHINE :-
A of Roti is a thin, disc-shaped food from the Indian
subcontinent; typically based on a seasoned dough usually made
from peeled black gram flour (urad flour), either fried or cooked
with dry heat (usually flipping it over an open flame). Flours
made from other sources such as lentils, chickpeas, rice, tapioca,
or potato can be used.

Khichu or Khichiyu is a dough+++h for making Roti, however

owing to its taste it is also consumed as Farsan (Snack /Side
Dish). It is made from Rice Flour, however a few other flours
(Wheat, Bajri, Jowar flour etc) are also used. The snack is
prepared by cooking flour in water like porridge with cumin
seeds and an alkaline salt known as Rotikhar (An Alkaline Salt
with major components as Sodium carbonate and Sodium
bicarbonate) and then steaming the lump. It is often served with
Oil and chilli powder. The name khichiyu or khichu is derived
from the ductile nature of the dough (Khinch in Indic languages
means to pull.)"

Khichu or Khichiyu is dough for making Roti, however owing

to its taste it is also consumed as Farsan (Snack/Side Dish). It is
made from Rice Flour, however a few other flours are also used.
Rotimade from this dough are known as Khichiya Rot. Khichu
is traditionally eaten during the monsoon season.

2
1.3PROBLEM & DEFINITION :-
Indian traditional foods have a long history and the knowledge
of preparing them has been passed on from generation to
generation. Large number of traditional foods is being consumed
by people in different geographical locations in the country. As
traditional staple foods in India, Chapathi and pooris and Roti
stand next only to cooked rice. In northern parts of the country
Chapathi and Poories are the main staple foods. In large number
of industrial and military canteens hundreds of Chapathi Poories
are prepared and consumed daily. All the preparatory operations
are carried out manually, which is tedious and time consuming.
In case a device is made available for making Chapathi, from
dough mixing to baking/frying. would result in reduction in
labour and difficult to cater to large number of people in short
time in serving Chapathi of uniform quality. Cooking is an
integral part of each and every human being as food is one of the
basic necessities for living. The biggest obstacle is that to get the
all kind of the product in to the one single machine. The concept
of project that machine which one produce this all things in to
the one machine
and fulfill the market demand.

3
1.4 WORKING PRINCIPLE :-
The machine consists of 2 plates in the lowest section which are
used to actually press the dough. The motor is mounted on the
top most plate. The top plate is secured in place with the help of
2 supporting rods. When the motor rotates, the screw rotates
which inturn moves the nut inhorizontal direction. The direction
changes with change in screw rotationdirection. The nut is
mounted to the press plate which presses downwards, when the
motor rotates.
When the press reaches its lowest point, the motor stops and
starts rotating in opposite direction to pull the press plate upward
and allow the user to remove the flattened roti. The mechanism
makes use of ball screw based mechanism to pressurize and get
flat roti/puri in very less time.
1.5 DESIGN :-

Flat breads are very popular especially in those parts of the

world where bread constitutes a major source of dietary protein
and calories. There are several forms of flat bread, and the
variation is mainly in terms of ingredient, technology, and
quality. Severalmodifications in the formulations have been
made in the recent past in order to improve the quality and
delicacy of these food products.
With urbanization and industrialization, the demand for ready to
eat and easy to carry products resembling flat bread in
appearance, but

4
having desirable qualities of bread offers one exciting possibility
to this effect. In India, wheat is one of the daily staples,
consumed in theform of different flat breads such as Chapati,
Parotha, Phulka, Puri and Roti.
1.6 PROJECT OBJECTIVE :-
 Reduce human effort.
 To reduce a time of production.
 To improve the quality of Roti.
 Compact design so its use for home purpose.
 Having low maintenance & long life.

1.7 ADVANTAGES :-

Set up the control unit to regulate the motor's speed and pressure
applied by the press. Test and adjust the settings as needed.
Create a designated area for dough preparation, including
mixing the ingredients and kneading the dough to the desired
consistency.
Connect the dough feeding mechanism to a consistent and
reliable source of dough, such as a hopper or container.
Ensure the dough dispenser delivers a consistent amount of
dough for each roti or puri.
Set up a conveyor belt or tray system to receive the flattened
dough from the press and transfer it for further processing or
cooking.
Conduct preliminary tests with small batches of dough to
optimize the settings and ensure smooth operation.
Once the setup is ready, start the motor and observe the
automatic roti puri maker in action. Make any necessary
adjustments based on the results.

6
2.1 STEP BY STEP ASSEMBLING :-
Step 1: Attach the Base
Locate the base of the machine and place it on a stable and flat
surface. The base is usually a sturdy platform that houses the
motor and other essential components.

Step 2: Mount the Motor

Identify the motor and its designated location on the base. The
motor is the central component that powers the press. Secure the
motor onto the base using screws or any mounting mechanism
specified by the manufacturer.

Step 3: Install the Pressing Mechanism

The pressing mechanism is responsible for pressing the dough to
create the rotis or puris. It typically consists of two plates or
rollers that apply pressure to flatten the dough. Attach the
pressing mechanism to the motor shaft or any other designated
connection point. Make sure it is aligned correctly and securely
fastened.

Step 4: Connect the Control Panel

Locate the control panel, which allows you to control the
machine's functions. This panel may include buttons, dials, or a
digital interface. Connect the control panel to the motor and
other relevant components following the manufacturer's
instructions. Typically, this involves plugging in cables or
attaching connectors.

7
Step 5: Assemble the Dough Container and Feeder
The dough container stores the dough, and the feeder
mechanism supplies the dough to the pressing mechanism.
Connect the dough container to the machine and ensure it is
properly aligned. Attach the feeder mechanism, which can be a
rotating belt or any other design specified by the manufacturer.
Make sure it is securely attached and able to transfer the dough
smoothly.

Step 6: Attach Safety Features

Check for any safety features included with the machine, such as
a safety lock or a cover. Install and secure these features as
instructed to ensure safe operation.

Step 7: Test the Machine

Once all the components are assembled, double-check all the
connections and ensure they are secure. Follow the
manufacturer's instructions to power up the machine and test its
functionality. Familiarize yourself with the control panel and
settings to operate the machine properly.

8
2.2EXPERIMENTAL SETUP :-
1. Motorized press mechanism: This can be a motorized arm
or a hydraulic/pneumatic system that applies pressure to
flatten the dough.
2. Dough preparation: You'll need dough made from wheat
flour, water, and optionally salt or other ingredients.
3. Dough feeder: A mechanism that feeds the dough to the
press.
4. Heating element: A heating mechanism to cook the
flattened dough.
5. Control system: A control unit to regulate the press, feeding
mechanism, and heating element.
6. Setup Steps:
7. Design and build the motorized press: Determine the type
of mechanism you want to use to flatten the dough. It can
be a motorized arm with a flat surface or a
hydraulic/pneumatic press. Design and construct the press
according to your requirements.
8. Build the dough feeder: Create a system that feeds the
dough to the press. This can be a conveyor belt with a
hopper or a rotating mechanism that moves the dough balls
into position for pressing.
9. Integrate the motorized press and dough feeder: Connect
the motorized press and the dough feeder so that the dough
is accurately positioned and pressed evenly.

9
[Link] & DISCUSSIONS :-
Motorized Press: The motorized press is the core component
responsible for flattening the dough. It usually consists of a
motor, a set of gears or belts, and a pressing mechanism. The
motor provides the necessary power to operate the press, while
the gears or belts help in transmitting and converting the motor's
rotational motion into the desired pressing force.

Pressing Mechanism: The pressing mechanism typically

involves a pair of rotating plates or rollers. The dough is placed
between these plates, and as they rotate, they exert pressure on
the dough, gradually flattening it into a thin disc. The plates may
have a textured surface to create the characteristic texture on the
roti or puri.
Control and Adjustability: Automatic roti or puri makers often
come with controls that allow users to adjust the thickness and
size of the bread. These controls may involve altering the
pressing force, the speed of the motor, or the gap between the
plates. The ability to customize these settings provides
flexibility in achieving the desired results.

10
[Link] :-
This Roti Making Machine is best suitable for workers, local
mess, home business. This machine meets the requirement of
productivity of Roti. It reduces human interference. Its work
efficiency is high due to mechanism. It increases human
comfort. The hand technique of Roti pressing is replaced by this
system very efficiently. The system establishes new
modernization in the market of Roti making machines.

11
5. FUTURE SCOPE :-
The process of putting dough can be automated with the help of
electronics and this involves the use of sensors and chips. In
future we make a machine with attachable oven which fastly dry
the Roti and puri & make it more reliable. By some modification
we will provide this machine which is able to make a Roti with
required thickness & also roti & puri are pressed by using this
machine.
