STEAM
CAPACITY ABN
Saturated Steam :-
Steam is said to be saturated on being brought in contact with water of same temp.”
as the steam. There is no evaporation of this water.
Super Heated Steam :-
Super heated steam is Steam at higher temp. than saturated steam at same
Pressure. Thus when brought in contact with water of saturation temp.
evaporation will continue until the steam becomes saturated again,
Latent Heat :- (1)
The quantity of heat required to change unit weight of water into steam at the
‘same temp. in Kcal /kg.
Sensible Heat :- (9)
The quantity of heat Supplied to unit weight of water ti raise it from freezing point.
to T°C,, in Keal /kg :
Total Heat :- (A)
The quantity of heat supplied to unit weight of water staring at O°C to change it
tosteam at T°C in Kcal. /kg. ie. 4= ory =
Super Heated Steam :-
If heat transmission from saturated steam to metal is excellent super heated steam
gives on the contrary a poor heat transfer coefficient. Jero Sehek states super heat
is permissible up to temp. of 160°C . Webre indicates that the degree of super
heat not exceeding 155 °C would’not have any effect on heat transmission in
multiple effect.
Boiling Point :-

6) Boiling point of sugar solution ie juice under a given pressure increases with,
the concentration of solution i.e Brix of solution,
©-g. Under atmp. Pressure M. Jc. Boil at 100.35°C instead of 100°C ie. 0.25°C is
