200ml (scant 1 cup) plant-based milk
75ml (⅓ cup) vegetable oil
1 tsp apple cider vinegar
175g (1½ cups) carrots,

Five layer pie

Seitan roast
with fondant
potatoes and lemon
thyme gravy

FOR THE ALMOND NOUGAT


85g (½ cup) coconut sugar
100g (⅔ cup) almonds, chopped
into small chunks
a pinch of Himalayan salt
FOR THE CHOCOLATE
230g (1 cup) cacao butter
5 tbsp cacao powder
5 tbsp pure maple syrup
a pinch of Himalayan salt

1 Place the coconut sugar in a frying


pan over a medium heat, stirring
occasionally for 5 minutes or until it is
melted and amber in colour. It will be
sticky and not runny and will burn easily
if heated too high.
2 Stir in the chopped almonds and
salt and remove the pan from the
heat. Place some baking paper on
a chopping board and spread the
almond sugar mixture onto the paper,
then leave it to cool completely. Once
cooled, chop into small chunks.
3 Melt the cacao butter in a bowl over a
saucepan half-full of water on a low heat,
making sure the bowl is not touching
the water. Remove from the heat and stir
in the other chocolate ingredients.
4 Once combined, stir in the almond
nougat and then spoon this mixture
into bar-shaped moulds or cake cases.
Place in the fridge for half an hour to
set. Store in the fridge for up to a week
or the freezer for up to 2 months.

TIP If you really want to make them look


the real deal, make them in bar moulds,
then once set, slice them into chunks and
again diagonally into triangles. You can
even use a little melted chocolate to stick
them together into a bar of triangles!

3 Stir in the red pepper, smoked paprika,
thyme and bay leaves, then add the
cannellini beans, tomatoes, stock and
a generous pinch of salt and stir them
all through.
4 Return the sausages to the pan, put the
lid on, then simmer gently on the hob
for 18-20 minutes.
5 Season generously with black pepper,
garnish with the parsley or thyme and
serve with mashed potato.

sugar in a microwave-safe jar. Microwave
in 30-second increments until all of the
sugar is dissolved.
6 Place the cabbage, jalapeño and coriander
in a large bowl. Add salt. Pour the vinegar-
sugar mixture over the cabbage and toss to
coat. Refrigerate until needed.

TO SERVE
7 Ladle the chilli between bowls and pile the
cabbage garnish on top, if using. Serve
with a dollop of plant-based sour cream in
each bowl.

a pinch of curry leaves
1 tbsp crushed chillies
2 tsp mustard seeds
2 tbsp mild curry powder
50ml (scant ¼ cup) coconut oil
½ red onion, sliced
4 garlic cloves, minced
500ml (2 cups) coconut milk
fresh spinach

1 In a large pot, add the lentils, water and

2 Leave to simmer for about 10 minutes,
until the water has disappeared, and the
lentils have turned into a yellow colour.

2 cloves
2 cardamom pods
½ tsp fennel
½ tsp cumin
1 tsp fenugreek
1 tsp cinnamon
1 tsp turmeric
1 tbsp black curry powder
salt and pepper, to taste
600g (4 cups) pumpkin or butternut squash
1 red onion
2 sliced red chillies
4 garlic cloves, minced
250ml (1 cup) water
250ml (1 cup) coconut cream

1 Place a pot (that has a lid) on a medium


heat, then add the oil and spices.
2 Once the spices are sizzling, add the
pumpkin or butternut and mix well so
that all the pieces are coated.
3 Add the onion, chillies, garlic and water
and bring to a simmer.
4 Place the lid on the pot and leave to
cook for 25 minutes.
5 Remove the lid and check that the
pumpkin is softened.
6 Add the coconut cream and gently stir.
7 Bring to heat.
8 Serve and enjoy!

Chipotle BBQ
mushroom tacos

FOR THE CHARRED CORN SALSA


2 ears of fresh corn, husked
½ a red onion, finely chopped
1 jalapeño, seeded and minced
a small bunch of coriander (cilantro), chopped
juice of 1 large lime
kosher salt
FOR THE MUSHROOM TACOS
2 tbsp avocado oil
3 garlic cloves, minced
2 tbsp tomato purée (paste)
1 tsp smoked paprika
225g (2 cups) cremini mushrooms,
trimmed and cut into bite-size pieces
425g tin (1¾ cups) of pinto beans,
drained and rinsed
2 tbsp soy sauce
1 tbsp pure maple syrup
1 chipotle pepper in adobo, minced
plus 1 tbsp adobo sauce
1 tbsp apple cider vinegar
4-6 corn or flour tortillas
TOPPINGS (OPTIONAL)
shredded romaine lettuce
chopped fresh coriander (cilantro)

1 For the salsa, heat a large frying pan


(skillet), preferably cast-iron, over high
heat until very hot. Add the corn ears
and cook for 8-10 minutes, turning
occasionally, or until charred on all
sides before transferring to a plate.
Once cool enough to handle, use a
sharp knife to shave the kernels off
the cob. Mix with the remaining salsa
ingredients and season with salt to taste.
2 For the taco filling, allow the pan to cool
slightly, then heat the oil over medium
heat. When shimmering, add the garlic,
tomato purée and smoked paprika.
Toast for 1-2 minutes, or until fragrant.
3 Add the mushrooms, pinto beans, soy
sauce, maple syrup, chipotle pepper
and adobo sauce. Cook for 5-7 minutes
more, or until the mushrooms have
softened and the sauce has thickened.
4 Turn off the heat and stir in the vinegar.

Courgette fritters

680g (6 cups) courgette (zucchini), peel kept on


2 tbsp ground flaxseed meal
12g (¾ cup) fresh dill, tough stems removed
and finely chopped
4g (¼ cup) fresh mint leaves, finely chopped
4 spring onions (scallions), thinly sliced (bruised
tops trimmed)
2 tsp ground cumin
¼ tsp freshly grated nutmeg
kosher salt
freshly cracked black pepper
43g (⅓ cup) plain (all-purpose) flour
90g (1 cup plus 2 tbsp) panko breadcrumbs
(or homemade bread crumbs; don't use
regular store-bought bread crumbs)
75g (½ cup) vegan feta, crumbled
3 tbsp olive oil, plus more as needed to
cook the second batch
flaky sea salt, for finishing
FOR SERVING
vegan tzatziki (optional)

1 Use the wide holes on a box grater to


grate the courgette. Leave the top nub
of the courgette on so you can use it as
a handle while you grate. For a faster
option, use a food processor if you have
a reversible shredding disc.
2 Add the grated courgette to a colander.
Sprinkle with 1 heaping tsp kosher salt;
toss to combine. Drain for at least
10 minutes, or for a few hours.
3 Make the flax eggs. In a small bowl, mix
together the flaxseed meal and 4 tbsp
warm water. Whisk well, then set aside for
10 minutes to gel.
4 In a large bowl, combine the dill, mint,
spring onions, cumin, nutmeg, ½ tsp
kosher salt, several cracks of pepper,
flour, panko and feta. Stir to combine.
5 Squeeze out the water from the courgette.
Add the courgette to a nut milk bag,
mesh produce bag, or thin dish towel.
Over a bowl, use your hands to squeeze
out as much water as you can (almost
like you're using an icing bag). Move the
courgette around a bit and reshape into a
ball. Squeeze the courgette in sections to
release more water. If needed, use both

pressing with your palms to form a patty

flatten the patty (it should resemble a

6   Pour the tofu mixture over the cooled 
pie crust, and smooth the top, leaving 
6mm (¼in) of the crust exposed 
around the rim.
7   Put the peaches in a medium bowl and 
toss with ½ tbsp maple syrup. Overlap 
the peach slices in a spiral pattern over 
the filling. Bake for 45-50 minutes, or 
until the peach edges are golden.
8   To make a tart glaze, put 1 rounded 
tbsp preserves or jam and 1½ tbsp 
maple syrup into a small bowl and stir 
to combine. 
9   Put the tart on a wire rack. Let cool for 
5 minutes. Spread the glaze over the 
peaches. Spoon the remaining ½ tsp 
of the preserves onto the centre of the 
tart. Gently run a table knife around the 
perimeter of the tart. Let the tart cool 
for 15 minutes. 
10   Carefully remove the springform rim.
