CHAPTER 1
BACKGROUND AND HISTORY
A snack is small service of food and generally eaten between meals.
Snacks come in a variety of forms including packaged snacks foods and other processed
food, as well as items made from fresh ingredients at home.
Traditionally, snacks are prepared from ingredients commonly available at
home without a great deal of preparation. Often cuts, fruits, leftovers, nuts, sandwiches,
and sweets are used as snacks. The Dagwood sandwich was originally humorous result of
a cartoon character’s desire for large snacks. With the spread of convenience store,
packaged a significant business.
Snacks food are typically designed to be portable, quick, and satisfying.
Processed snacks food, as one from of convenience food, are designed to be less
perishable, more durable, and more portable than prepared foods. They often contain
substantial amounts of sweeteners preservatives, and appealing ingredients such as
chocolates, peanuts, and specially-designed flavor (such as flavored potato chips).
Mango is a low-calorie fruit that is high in fibre, and is a great source of
vitamins A and C. It also contains folate, B6, iron and a little calcium, zinc and vitamin
E. Mangoes are a good source of antioxidants, containing certain phytochemicals such as
gallotannins and mangiferin which have been studied for their health benefits.

Mangoes are juicy stone fruits (drupe) from numerous species of topical
trees belonging to the flowering plant genus Mangifera, cultivated mostly for their edible
fruits.
The majority of these species are found in nature as wild mangoes. The
genus belongs to the cashews family Anacardiaceous. Mangoes are native to South Asia,
from where the “common mango” or “Indian mango”, Mangifera indica, has been
distributed worldwide to become one of the most widely cultivated fruits in the tropics.
Other mangiferaspecies are grown on a more localized basis. It is the national fruit of
India and Pakistan, and the national tree of Bangladesh. It is the unofficial national fruit
of the Philippines.

Mango is also known as the ‘love fruit’. It has the aphrodisiac qualities
which also increase virility in men. So, have mangoes and enhance your love and
passion. Mangoes are also loaded with vitamin A, making it a perfect fruit to improve eye
sight. It also prevents night blindness and dry eyes.
Mangoes contain antioxidants such as quercetin, fisetin, isoquercitrin,
astragalin, gallic acid and methyl gallate. All these properties protect our body against
breast cancer, colon cancer, prostate cancer and leukaemia.

Cheese is a dairy product derived from milk that is produced in a wide
range of flavors, textures, and forms by coagulation of the milk protein casein. It
comprises proteins and fat from milk, usually the milk of cows, buffalo, goats, or sheep.
During production, the milk is usually acidified, and adding the enzyme rennet causes
coagulation. The solids are separated and pressed into final form. Some cheeses have
molds on the rind, the outer layer, or throughout.
Over a thousand types of cheese from various countries are produced.
Their styles, textures and flavors depend on the origin of the milk (including the animal's
diet), whether they have been pasteurized, the butterfat content, the bacteria and mold,
the processing, and aging. Herbs, spices, or wood smoke may be used as flavoring agents.
The yellow to red color of many cheeses, such as Red Leicester, is produced by adding
annatto. Other ingredients may be added to some cheeses, such as black pepper, garlic,
chives or cranberries.
For a few cheeses, the milk is curdled by adding acids such as vinegar or
lemon juice. Most cheeses are acidified to a lesser degree by bacteria, which turn milk
sugars into lactic acid, then the addition of rennet completes the curdling. Vegetarian
alternatives to rennet are available; most are produced by fermentation of the fungus
Mucor Miehei, but others have been extracted from various species of the Cynarathistle

family. Cheesemakers near a dairy region may benefit from fresher, lower-priced milk,
and lower shipping costs.

Turon is a popular snack and street food among Filipinos. It is also known
as "lumpiyang saging", it is a Philippines snack made of thinly sliced banana, and a slice
of jackfruit, dusted with brown sugar, rolled in a spring roll wrapper and fried. We all
know that Filipinos can easily enjoy a meal. As a twist, instead of banana stuffing, we
change it to mango and cheese. Filipinos must taste the other kind of turon that will
satisfy their cravings.
We named it Mango Cheese Turon. Mango Cheese Turon is made of
sliced mangoes and a stripped cheese, rolled in spring roll wrapper. It is a type of Turon
that has a two combination of foods, it can give vitamins and other benefits that will
came from mangoes and cheese. We want to encourage other people to know the other
kind of Turon.
Filipinos are looking for the other dessert that is new to the taste of them.
Philippines has many deserts but we cannot deny that we are still looking for a something
new. Mango and cheese have a good combination. Cheese can combine in many foods
and one of those is mango. We decided to do this kind of turon because many Filipinos
are like to eat sweets with a twist. People are having attention to a food when it has a
twist.
