1. Introduction/ Background

A grease arrestor or grease trap, it is designed to collect grease and oily


waste by flotation and coagulation and to settle solid materials as sludge,
preventing this material from discharging to sewer system and causing
blockages.

GREASE TRAP

It is typically a large concrete box with two or three compartments and


having a baffle at the inlet end and a T-square outlet. Which it is commonly
used for industrial waste water pre-treatment in food preparation processes.

Manhole
All grease traps is offensive when the top is disturbed accumulating FOG in which
over the time begins to decompose and diffuse a rotting smell.

INLET
- Flow from four or fewer kitchen fixtures enters the grease trap.
BAFFLES

- The baffles help to retain grease toward the upstream end of the grease trap
since grease floats and will generally not go under the baffle. This helps to
prevent grease from leaving the grease trap and moving further downstream
where it can cause blockage problems.
The number of baffles will depend upon the design. Smaller grease traps often
have 3 baffle plates but inspection often reveals one or more missing. If the trap
was designed for 3 baffles it needs three baffles to do its job effectively.

T-SQUARE OUTLET

- The water exits the grease trap through the outlet pipe and continues on to the
grease interceptor or to the sanitary sewer system with an air relief is provided to
maintain proper air circulation within the grease trap.
CLEANOUT
A cleanout is provided at the outlet or just downstream of the outlet to provide access into the pipe to
remove any blockages.

MANHOLE
A manhole cover is a removable plate forming the lid over the opening of
a manhole, an opening large enough for a person to pass through that is used
as an access point for maintenance and other work

Oil and grease floats on the water surface and accumulates behind the baffles.
The oil and grease will be removed during routine grease trap cleaning.

Solids in the wastewater that do not float will be deposited on the bottom of the
grease trap and will need to be removed during routine grease trap cleaning.
