Pepper Rasam Recipe
Soak tamarind in water for sometime, squeeze its pulp to extract juice and keep it aside in
a pot with little water. Discard the tamarind pulp in trash bin. Simmer tamarind juice with
salt, sugar, some tomato, cumin seeds, coriander seeds, some ginger, black pepper corns,
little chilli powder and coriander leave stalks for a while. Remove and strain, add the tomato
back to the stock.
Dry roast some cumin seeds, pepper corns, coriander seeds and pound with fresh garlic
(with its skin) using a mortar and pestle. Add this pounded powder to the pepper rasam.
Temper in oil with dried red chillies, cumin seeds, mustard seeds, coriander seeds, little
turmeric powder, little inguva, little crushed garlic and curry leaves. Then add these
ingredients to the rasam. Add some lemon juice, and stir it well. Let it simmer for a while.
Remove the rasam and garnish it with cilantro leaves. Serve hot in steel bowl. Enjoy with
rice!
