CHAPTER I

Company Background

History of Mang Inasal

Mang Inasal comes from the word “Mang,” which means “Mr.” in English, and

“Inasal,” which is derived from “Inhaw.” They called it Mr. Barbecue. Edger Sia II was

the founder of Mang Inasal. He was an “INJAP,” which means half Chinese and half

Japanese. The owner of Mang Inasal knew that the Filipino barbecue quick-service

restaurant still had growth potential. He understood how to win the hearts of Filipinos, so

he started Mang Inasal with traditional Filipino cuisine, a dine-in concept, and unlimited

rice and soup. The primary reason for Mang Inasal’s success was its wide range of

Filipino comfort food, including chicken Inasal with its distinct taste that Filipinos love.

He began serving Filipinos Chicken Inasal, Pork BBQ, and unlimited rice and soup. They

received numerous awards for their outstanding quick-service restaurant in 2008, 2010,

and 2015, and they have continued to win awards in subsequent years.

Today, Mang Inasal is a leading brand in the Philippines, known for its strong

portfolio of Chicken Inasal, Pork BBQ, Halo-Halo, and many other items. Variations are

regularly developed on the menu to meet customer demands

satisfaction.
Food Safety and Cleanliness Policy

Mang Inasal follows food safety and sanitation practices to maintain the

quality and safety of its food products and dining areas. Employees are required to

observe proper food handling procedures, maintain cleanliness in kitchen and

dining areas, and ensure that utensils, tables, chairs, and equipment are regularly

sanitized. These practices help protect customers from health risks and support the

company’s goal of delivering safe and high-quality meals. The company also

encourages continuous improvement in cleanliness and operational standards

across all branches.

Employee Conduct and Workplace Policy

Mang Inasal promotes a positive and respectful working environment

guided by its values of Humility to Listen and Learn, Spirit of Family and Fun,

and Integrity. Employees are expected to treat customers and co-workers with

respect, honesty, and professionalism at all times. Teamwork, cooperation, and

continuous learning are encouraged to improve employee performance and

rules, maintain discipline, and uphold ethical standards in all business operations.

Mang Inasal collects and processes customer information responsibly in

Additionally, its affordable pricing strategy combined with high

sales volume especially from its well-known unlimited rice offering helps

maintain steady revenue. This financial stability allows the company to

remain competitive in the fast-food industry while still offering

value-for-money meals to customers.

Mang Inasal’s operations are designed to be fast, efficient, and

standardized across all branches. The company follows strict procedures in


food preparation to ensure consistency in taste and quality, especially for

its signature Chicken Inasal. This standardization helps maintain customer

satisfaction regardless of location.

Porter’s Five forces

1. Industry or Competitive

The fast-food industry where Mang Inasal operates is highly

competitive. One of its biggest competitors is Jollibee Foods Corporation,

brands such as Jollibee, along with other local and international

restaurants like McDonald's and Chowking. These companies compete in

terms of food quality, affordability, customer service, and brand

popularity.

Competitive rivalry is strong because many fast-food restaurants

offer similar products such as grilled chicken meals, rice meals, and

combo meals. Because of this, companies rely heavily on promotions,

advertisements, and unique dining experiences to attract customers. Mang

Inasal is widely known for its “unlimited rice” offer, which helps the

brand stand out from competitors and build customer loyalty.


Another factor is that the fast-food market in the Philippines is

already well-developed, making competition more intense. Instead of

focusing only on gaining new customers, businesses also compete to keep

their loyal customers from switching to other brands. This pushes

companies to continuously improve their menu, pricing, and services.

In addition, changing consumer preferences encourage companies

to introduce new food products and healthier meal options. Delivery

services and online ordering also became important, especially with the

The threat of substitutes for Mang Inasal is high, because

customers have many alternative food choices that are easily accessible,

affordable, and offer similar satisfaction, such as fastfood competitors like

Jollibee and McDonalds, budget friendly local carinderias that serve home

style meals, convenient ready to eat options from stores like 7-Eleven, and

other grilled chicken providers like Andoks, all of which make it easy for

customers to switch based on price, taste, convenience, or preference.


3. Threat of new entrants

The threat of new entrants for Mang Inasal is low to moderate

because strong brand loyalty high capital requirements, established supply

chains, and the backing of Jollibee Foods Corporation make it difficult for

new competitors to enter and compete at the same scale, while additional

barriers such as prime store locations, efficient operations, menu

standardization, and aggressive marketing further strengthen its position,

although small local eateries and barbecue stalls can still enter the market

on a limited scale and pose minor competition

Buyers possess significant bargaining power primarily because the

substitutes available. Since customers have plenty of other restaurants and

eateries to choose from, Mang Inasal must maintain reasonable prices and

competitors offering similar products. Furthermore, the target market is

This forces the company to keep prices accessible and attractive to

5. Bargaining Power of Suppliers

The majority of fast food establishments purchase the raw

ingredients and other supplies they need to run their businesses from both

domestic and foreign vendors. Considering that any quick service's food

inventory is essential, Restaurant operations are significantly impacted by

the providers of these goods. Without food to offer, Mang Inasal or any

other QSR cannot function. Evidently, Mang Inasal Philippines Inc.

created their own commissary structure over time to get rid of the

industry's suppliers' comparatively powerful bargaining leverage.

Suppliers in this sector can go all the way back to the agriculture sector,

aside from those who make the food. Packaging firms and farms that raise

meat and poultry.

Concentric diversification is a growth strategy in which Mang Inasal

expands its operations by introducing new but related products and services, such

as additional Filipino dishes, packaged food items, enhanced beverage options,

and alternative store formats, while leveraging its existing competencies, brand

strength, and distribution channels to increase market share and sustain

competitive advantage. This strategy enables the company to capitalize on its

strong brand identity and loyal customer base, while also increasing revenue
