Vietnam Modern Urban Channels”, Kewpie becomes the top brand in

market share in salad dressings in Vietnam Modern Urban Channel.

1.2. Products

Kewpie has many types of productions: mayonnaise, dressing, baby food

and others. All of them have consistently insisted that good products start
with decent ingredients from one era to the next. In Vietnamese market,
two main products are mayonnaise and dressing.
Kewpie Mayonnaise is the key product, and it is loved by the Japanese
since 1925, they have also created many different tastes for families and
products with huge amount for businesses. The secret that makes Kewpie
Mayonnaise taste like no other mayonnaise is per 500g of KEWPIE
Mayonnaise, there are 4 egg yolks. The protein in egg yolks, which
contains amino acids, is a crucial component of Kewpie's pleasant, savory
flavor.

The main ingredients of Kewpie Mayonnaise are eggs, vegetable oil, and
vinegar. All resources and ingredients are checked, and quality controlled
before the input.

In addition, Kewpie dressings are also ubiquitous in the international

market, with many choices in terms of taste for customers. As the
demand for Kewpie mayonnaise increased, the firm began to create other
goods as well, and in 1958 it became the first company in Japan to
manufacture and market dressings. The ingredients of Kewpie dressings
are Water, Soybean Oil, Sugar Soy Sauce, Vinegar, Sesame (5%), and
Sesame Oil (2%), Egg yolk. As Mayonnaise products, the resources, and
ingredients of dressings are controlled carefully.

2. Observation

The procedure for manufacturing Kewpie Mayonnaise is graphically

illustrated in the picture below. There are three main stages: choosing
ingredients, mixing, and packaging.

Figure: Process of producing Kewpie Mayonnaise

Ingredients:
Before being used, every component and resource is examined and
quality controlled. Unqualified materials and resources are rejected at all
checkpoints and levels, including the micro-bio, physical, and chemical
requirements; they are given back to the suppliers. putting in place a
method to stop manufacturers from employing resources that are out of
date or untrained.

lOMoARcPSD|63325510

Figure: Checking the ingredients before producing

Mixing process:
In the mixing process, before going to the conclusion of the mixing
process for the raw ingredients used to make mayonnaise, the filter
equipment needs to be installed in order to eliminate any combined
compounds and oddities from the materials. After mixing, mayonnaise will
be poured under extremely high pressure into a stainless-steel filter
equipped with very small holes. The homogeneous size of all oil particles
aids in the emulsification process. As a result, it makes it possible to
maintain the sustainability of the entire product structure. Mayonnaise's
ideal flavor is achieved in this way.

Extracting, pouring and packaging:

Utilizing an automated system that offers comparable bottle pouring. The
lid is automatically closed and sealed utilizing microwave heating pressure
and a single sort of action. As a result, we can maintain consistent quality
across the board.

Especially, the Kewpie Mayonnaise package bottle has been designed in a

different way compared with other brands. The reasons for this package
method is shutting the oxygen out, and maintaining perfectly the flavor of
mayonnaise.

3. Analysis

The Kewpie system is set up extremely scientifically, resulting in great

production efficiency and very little mistakes in the product. Modern
equipments and automated machinery are used in the workplace to
safeguard the hygiene and safety of production. There are not many
people needed; the factory's whole staff of engineers, including the
operators, numbers just approximately 100 people. The environment used
for food preparation and processing is frequently cleaned and hygienically
maintained, every worker has to go through a careful cleaning and
protection process before entering the factory.

1. Introduction
1.1. About the company

Satori, a beverage production and trade company, was established in

2017 with the goal of expanding the variety of drinks available to
customers that are not only refreshing but also beneficial to their health.
Satori has proven itself as a powerful firm in the drinking water industry
with more than 20 years of expertise in the water treatment industry.
Satori pure drinking water brand is expanding and incorporating these
admirable traits.

SATORI mineral water factory was inaugurated in September 2018 at Long

Hau Industrial Park, Long An province. To accommodate the exploitation,
manufacturing, and distribution of high-quality drinking water, the 30,000-
square-meter facility is being extended.

Furthermore, quality control methods in accordance with FSSC 22000

(Food Safety System Certification), the international standard for food
safety systems, are used to closely monitor the product's place of origin.
As a result, construction materials must adhere to clean room standards
and be durable.

1.2. Products

The primary product from Satori is pure drinking water that uses sRO
mineral circulation technology to keep some of the water's natural mineral
content. A Japanese RO reverse osmosis system with UF ultrafiltration
membranes, UV and ozone sterilization are used in Satori's bottled water
production process.
At the current time, Satori has proliferation about their product in terms of
size and volume to meet the consumer’s demand:

Recently, Vietnamese customers have tendency to be more health

conscious and adopt healthier living options. Thus, Satori is following this
trend while striving hard to make nutritious goods that are
environmentally sustainable while still having distinctive flavors that
appeal to Asian consumers.

2. Observation

Satori employs the first sRO mineral circulation technology in Vietnam to

keep just the right amount of the natural mineral content for health. Using
eight innovative procedures and ultrafiltration membranes as tiny as 0.01
microns, clean water can be purified.

8 steps including:
1. Receiving groundwater that has been filtered in accordance with the
Ministry of Health's criteria.
2. Pretreatment makes the water more transparent by removing color,
odor, and leftover chlorine.
3. Japan is the origin of UF (Ultra Filtration) membrane technology with
a 0.01-micron size to assist in removing tiny pollutants and
microorganisms.
4. The RO (Reverse Osmosis) filtration process produces water clean
up.
5. The sRO (selective reverse Osmosis) process keeps some of the
healthy natural minerals in the body so that they can be dissolved
into pure water.
6. UV rays are still used to sterilize purified water using mineral
circulation technology to avoid reinfection.
7. Utilize a 0.2-micron microfilter to remove germs.
8. Maximum purity is ensured using ozone technology so that the final
water is prepared for supply to the filling line.

3. Analysis

messages.downloaded_by
lOMoARcPSD|63325510

Even though Satori entered the market much more recently than other
companies in the same sector, it has grown to become one of the top
three brands for manufacturing and selling soft drinks in Vietnam. When
using mineral circulation, leading the country of Vietnam in the production
of mineral water. This distinguishes Satori from the other spearfish, which
is also a feature that aids in Satori's development. Moreover, Satori not
only invests in the products quality, but also has an environmental-
friendly packaging design and approriate price for all people.

The Satori facility is set up and run in a precise scientific manner, and the
manufacturing procedures are closely watched. In order to meet
consumer demand, the company has established an automated
production line from supplier Sidel with design capacities of 12,000 bottles
per hour for the bottle line and 450 bottles per hour for the bottle line.
Obviously, the facility was constructed in a lush industrial park in Long An,
which gives Satori the opportunity to create items that are good for
consumers.

Improvement idea:
Besides several successes, Satori still has some limitations in terms of
marketing compared with big brands such as Aquafina or Lavie. The
majority of Satori's marketing initiatives seem to be ineffective, the
products are underrepresented in the market, and it is challenging to
spread brand awareness among consumers.

 Yakult Vietnam

1. Introduction
1.1. About the company

messages.downloaded_by
lOMoARcPSD|63325510

Professor Minoru Shirota (1899 – 1982) was convinced that beneficial

bacteria were the key to a long and healthy life. As a result, Professor
Shirota created the first commercial probiotic drink in the world, called
Yakult, using milk as the basis to transfer the Lactobacillus casei Shirota
strain to the gut. Yakult has been made and distributed all throughout
Japan since the company's founding in 1935, and Professor Shirota
established the Yakult Honsha Company in 1955. The Yakult group has
since grown significantly, now including approximately 200 businesses
across more than 30 nations and territories.

Figure: Yakult factories network in the world

Yakult Vietnam was founded on June 26, 2006, and it opened for business
in August 2007. Presently, most supermarkets and retail establishments in
Vietnam carry Yakult's goods. Additionally, Yakult is also delivered straight
to consumers' homes via the Yakult Lady system.

1.2. Products

Yakult has developed many types of products from beverage to skincare

products; however, the only product has been manufacturing in Vietnam
is 6.5ml fermented milk drink in Vietnam.

The reason why Yakult Vietnam just have a small bootle size is 1 small
bottle a day is enough for optimal effect. Moreover, Yakult product has a
different function compared to other products which is regarded as a
regular beverage or dairy product. Because bigger bottles won't be
immediately and will instead be kept in the refrigerator, it is more sanitary
to use a smaller sealed container and discard it after use. Consequently,
there is a significant chance of contracting additional dangerous germs.

 Preparing ingredients:

All the Yakult’s components, including skim milk powder, glucose, and
refined sugar, are imported from Japan.
 Dissolving tank:

In the dissolving tank, heated water between 50 and 55°C is used to

dissolve the skim milk powder, resulting in the formation of a milk
solution.

 Culture Tank:

After being heat sterilized from the dissolving tank, the milk solution is
transferred to a culture tank. Subsequently, it is cooled down to a
temperature of 37°C. The culture starter, L. paracasei strain Shirota, will
then be added to the tank from the seed tank. The solution is allowed to
ferment until the concentration of L. paracasei strain Shirota reaches an
optimal level, resulting in the transformation of the solution into curd
form, commonly known as culture base.

Figure: Culture Tank

 Storage Tank:

After fermentation, the milk becomes sour. Consequently, the sour milk is
transferred into the storage tank, and syrup is added to counteract its
sourness. The storage tank has a capacity of 18,000 liters, allowing the
production of approximately 360,000 bottles of Yakult. The Yakult in this
tank is kept in concentrated form and chilled to a temperature of 5
degrees Celsius.

100 other bottles of the same taste. The 5-bottle Yakult pack will come in
either a single flavor or a blend of tastes. Yakult in this five-pack will also
be contained in the container. A conveyor will move every Yakult
container to the cool room.

 Distribution:

Yakult that has been kept in cold chambers is now prepared for delivery
by frigid trucks to the following sources: supermarkets, convenience
shops, car parts vending machines, schools, and exports to foreign
countries. Home delivery and door-to-door delivery are assisted by Yakult
Lady agents, who often work in public housing neighborhoods.

3. Analysis

messages.downloaded_by
lOMoARcPSD|63325510

The Yakult factory's production process is automated, contemporary, and

scientifically organized. As a result, manufacturing doesn't require many
employees to operate smoothly and with few accidents. To maintain food
safety and cleanliness throughout production, workers' hygiene practices
and factory facilities are constantly monitored.

All the factory's contemporary equipment complies with Japanese

requirements. Yakult can be produced at a maximum rate of about
800,000 bottles per day, however this figure is subject to vary based on
consumer demand.

Improvement idea:
Yakult has introduced several flavors and types in other regions, however
there is just one Yakult drinking yogurt product available in Vietnam.
Yakult should thus introduce additional items into the Vietnamese market
and improve product packaging in order to compete with other brands of
fermented yogurt drink.

Due to consumers' propensity to shop in supermarkets and retail

establishments, the "Yakult Lady" delivery system is not particularly
effective in some locations. Yakult has to constantly modify its active
advertising and do a more thorough market analysis.
