Chapter # 11

Food allergies are hypersensitive reactions of the immune system to specific substances, primarily proteins in foods, leading to symptoms like sneezing, rashes, and difficulty breathing. Diagnosis can be done through skin prick tests or blood tests for IgE antibodies, while prevention involves avoiding trigger foods. Food intolerance, often caused by chemical reactions or enzyme deficiencies, results in different symptoms and can be diagnosed through hydrogen breath testing.

Food allergy

 Allergy is the hypersensitivity or

abnormal reaction of the body’s
immune system in response to
exposure to a specific substance
 Caused by food, drugs, mites, dust
and insect venom
 It is adverse immune response to
consumption of food specially
protein
 Some protein not digested and
tagged by an antibody
immunoglobulin E
 They tag protein as harmful
Symptoms

 Excessive activity of certain

white blood cell called mast
cell and basophiles by IgE
 Caused sneezing, runny nose,
itching, burning and swelling
around mouth, rashes and
difficulty in breathing
 Severe allergic reactions are
eczema, hives and hay fever
Occurrence

 It is occurred mistakenly when

immune system indentify food as
harmful
 Immune system release antibodies
known as IgE to fight allergen
 An allergic reaction caused by
eating specific food
 “Food dependent exercise induced
anaphylaxis” caused by exercise
Causes
 Food allergy is over reaction by
consuming specific food components
 Egg allergy caused by egg yolk and white
that contain 4 types of protein such as
ovomucoid, ovalbumin, ovotransferrin and
lysozyme
 Peanut allergen are 7 S seed storage
globulin, 11 S seed storage globulin and 2
S albumin
 Milk allergen are casein and whey protein
 Soy allergen are 7 S seed storage globulin,
11 S seed storage globulin and inactive
papain related thiol protease
Prevention
 Avoid from consumption of
particular food
 Medication may prevent and
minimize
Diagnosis
Skin prick test
 Easy and provide result within
minutes
 In this test suspected allergen
pricked top layer of skin
 Allergy to particular allergen
visible within minute by swelling
and reddening of skin
Cont..
Blood test
 RAST test ( radioallergosorbent test)
 It detect the presence of IgE
antibodies to a particular allergen
 By this test hundred types of allergen
can be screened
Food intolerance
 Food intolerance caused by chemical
reaction
 Food additives, preservatives, coloring
and flavoring and some organic
chemicals are behind the food
intolerance
 Often result by absence of specific
chemicals and enzymes
 Which needed for digestion
symptoms
 It is related to amount of food consumed
 Nervousness, tremor, sweating, rapid
breathing, diarrhea, burning sensation on
skin and tightness across the face and
chest
 Benzoates and salicylates are present in
food are capable of food intolerance
 Dairy products, chocolates, citrus fruit,
tomatoes and food additives
 Deficiency of digestive enzymes
Occurrence
 Lactose intolerance
 Body unable to digest lactose sugar
present in milk and milk products
 Lactase enzyme responsible for
breakdown of lactose into glucose and
galactose
 Symptoms appear in 30 minutes to 2
hours
Symptoms
Cont..
Gluten intolerance
 Also known as celiac disease
 Not curable and damaging the
small intestine and causing poor
absorption of vitamins
 Prevent by using low gluten
products
 Symptoms are constipation,
diarrhea, abdominal pain, bloating,
fatigue, joint pain and weight loss
 Blood test and stool fat test
Symptoms
Cont..
Fructose intolerance
 It is caused by enzyme deficiency
initially misdiagnosed as “irritable
bowel syndrome”
 If not treated properly caused kidney
and liver damage extremely
 Fructose free diet used life time
 Another inability is fructose
malabsorption
Diagnosis
 It is diagnosis by hydrogen breath
testing
 Individual drink small cup of
fructose mixture
 After short time patient breath into
breath analyser machine testing the
fluctuation of hydrogen levels
Diarrhea
Chronic
Gas fatigue

Symptoms
Bloatin Nausea
g of fructose
intolerance

Vomiting
