Priority judgement: Steamed fish is the best food option compared to fried meat and/or a rich sauce. The
natural tenderness of fish makes it an easy dish to prepare, as well as being culturally appropriate and easy
to serve in hand portions that are low in fat. Sodium is the most important control; flavour is primarily
developed using ginger, garlic, spring onion, rice vinegar, and lemon, while a reduced-sodium soy sauce is
optional (it may be omitted if the instructor requests an even lower-sodium version), with one teaspoon of
reduced-sodium soy sauce used for the entire 2-person recipe.

Method: Logical Sequence
1. Prepare safely. Use soap and warm water for hand washing. Wipe down the work surface. Speak
to reduce standing time by getting all ingredients and equipment ready before food is cooked.
Refrigerate fish until needed.
2. Cook the rice. Rinse rice until the water is clear. Pour the measured water in and cook in a rice
cooker or covered saucepan. Cover and cook until soft and fluffy, 5-10 minutes.
3. Prepare the pear. In a small saucepan, combine pear quarters and ginger slices. Add water to
partially cover. Bring to a gentle simmer, cover and cook until softened, about 12-15 minutes. Do
not add sugar. Keep warm.
4. Prepare the fish. Be sure to inspect the fillets for bones. Dry it with a paper towel. Place on a
heatproof plate and top with ginger, garlic and half of the spring onion. Stir together the reduced
sodium soy sauce, vinegar or lemon juice, water and optional oil; pour over the fish.
5. Steam the fish. Put the plate in a steamer that is preheated. Cover and steam until it is tender,
about 8-12 minutes, depending on thickness. The fish should be opaque, flake readily and have a
safe internal temperature of approximately 70°C.
6. Cook the vegetables. In a pan, heat one teaspoon of canola oil. Mix in ginger, mushrooms and
carrot and cook for 1-2 minutes. Add water, cover and cook gently for 4–5 minutes. Add bok choy
and cook for 2-3 minutes or until vegetables have softened but retained their colour. Stir in rice
vinegar. Do not add salt.
7. Assess texture and temperature. Ensure that food is neither hot nor too hot for the child's dentures,
that fish is moist and boned, and that all hot food is warm but not too hot.
8. Plate attractively. Arrange a moderate mound of rice, fish in the centre and vegetables next to it.
