Sandwich Mise en Place


Sandwiches are usually prepared to order
When setting up a sandwich station, the goal is to have all
ingredients and equipment within reach
The station is set up to suit the requirements of the restaurant

Basic Guidelines for Setting Up a Sandwich Station


Prepare ingredients
All ingredients should be cooked, mixed and sliced
Arrange and store ingredients
Arrange all ingredients within easy reach
Cold items should be properly refrigerated
Select and arrange equipment
May be as small as a hand tool or as large as a slicer, grill,
griddle, fryer or broiler
Presenting and Garnishing Sandwiches
Usually cut in half, thirds or quarters
Cutting makes the sandwich easier for the customer to
handle
Cutting also allows for attractive presentation
Sandwiches can be arranged to add height to the plate
Condiments may be presented on the side
Appropriate garnishes should be included
Lettuce, tomato, pickle, etc.
Accompaniments
French fries, potato salad, etc.

CLUB SANDWICH
INGREDIENTS WEIGHTS PROCEDURES
White Bread 6 slices, toast Place the bread in a clean work surface.
Spread the tops with mayonnaise.
Mayonnaise As needed
Lettuce 4 leaves On the first slices, place lettuce leaf, then 2
Tomato ¼ inch thick slices of tomato, then 3 strips of bacon,
Bacon, cooked 6strips
crisp
Sliced chicken 120g Please the second slice of toast on top,
breast spread side down with mayonnaise.
On top of this, place the chicken , then the
other lettuce leaf.
Top with the third slices of toast, spread
side down.
Place frilled picks on all 4 sides of the
sandwich.
Cut the sandwich from corner to corner
into 4 triangle will have a pick through the
center to hold together.
Place in a plate with the points up.
Garnish.

BASIC MAYONNAISE
INGREDIENTS WEIGHTS PROCEDURES

Eggyolks 3 pcs. Combine the yolks, vinegar, water and mustard in


White vinegar 30 ml a bowl.
Mustard (dry) 1t Mix them well with a wire whisk until the mixture
is slightly foamy.
Vegetable oil 720 ml Gradually add the oil in a thin stream, constantly
beating with the whip, until the oil is incorporated
and the mayonnaise is thick.
Refrigerate
Salt To taste
Pepper To taste
Lemon To taste

CLUB SANDWICH
INGREDIENTS WEIGHTS PROCEDURES

on the bread.

before serving
Slice the side. Make
diagonal slice.

HAM- CHEESE ROLL SANDWICH

Ham 3 pcs Put ham on the bread

Loaf Bread 2 pieces Assemble the loaf bread.


Grill the bread
Butter 2T Brush the butter while
grilling. After slightly
brown.
Quick melt cheese 1 piece A slice the cheese
thinly .Put the cheese on
the bread.
