1. Introduction of the Organisation

Hit & Run Restaurant is an informal restaurant that sells convenience foods to the urban
consumers with modern comfort foods and local tastes. It falls between the quick-service and
full-service models, concentrating on value pricing, quick service, and experience dining, to
compete in the fast foodservice in Mumbai (Tripadvisor, 2025).

2. Target Market of the Organisation

Primary Market:

● Young adults in their mid-twenties and middle aged who are busy career oriented people
interested in staying out or having takeaway foods after work or on the move (Kumar,
Kulkarni and Rathi, 2022).
● Young adults and students aged 18 -30 who are driven by value, ambience, social
interactions and shareable menu items.

Secondary Market:

Domestic travelers and visiting families who visit the dining out scene in Mumbai; this market is
likely to lean towards distinctive local cuisine and experience surroundings (Patkar and Singh,
2025).

Segmentation Logic:

● Demographic: Young to middle-aged adults with disposable income.


● Geographic: Mumbai metropolitan region, especially commercial and entertainment
districts (Nusra, 2025).
● Psychographic: Experience seekers and social diners who prioritise ambience and digital
discovery.
● Behavioural: Customers do extensive internet research, reviewing and reading online
comments and other social networking sites before selecting a restaurant. It is estimated
that 88% of diners research online before deciding on a restaurant and half learn about
new restaurants through social media ([Link], 2023).

3. Current Marketing Mix (7Ps) with Service Characteristics

Product:
Hit & Run provides different kinds of foods such as snacks, local delicacies as well as special
beverages to suit different tastes. The menu is designed to highlight things that are physical
(food) and non-physical (experience) in terms of appeal (Indian Retailer, 2024).

Price:

The restaurant uses a mid-range pricing, which is competitive in the casual dining segment in
Mumbai, and it balances the perceived value and affordability. This is essential in a market
where increased cost of inputs such as commercial LPG price increases may affect end-price
(Singh, 2022).

Place:

Hit and Run is in an area with high foot traffic and is conveniently placed where it is easy to
view corporate offices and entertainment centers.

Promotion:

The restaurant uses social media, online directories, and word-of-mouth to promote business.
Nevertheless, the present promotional strategy is not coherent and does not use data-driven
targeting to the full extent (Ram and Amita Nilesh Kolapkar, 2024).

People:

Quick service and friendly service is trained on service staff. However, the lack of consistency in
service delivery will impact the total experience in the intangible aspect of service quality.

Process:

Tables and ordering processes are simplified towards speedy turnover. Integration of
technologies to do their reservations or order online is at its early stages.

Physical Evidence:

The atmosphere, decoration, sitting arrangement, and cleanliness are physical indicators that
assure the customers of the attention of quality. The importance of visual presentations is
significant since 60% of visitors say that the quality of the photos of ambience is more important
than the descriptions (Sun et al., 2025).

4. Current Digital Marketing Practices

Hit & Run Restaurant in Mumbai is represented in Instagram and Google Business Profile,
although the interaction is not as high as in the industry. The restaurant is not that organized in
its content calendar, and it does not respond to online reviews as well as it utilizes user-generated
content (Das, 2025). However, according to research conducted in the industry, customers trust
online reviews as much as they trust personal recommendations, with restaurants that respond to
reviews enjoying up to 35% increased rate of returns (Suwasna Bhandari Jaishi et al., 2025).
Moreover, two-thirds of consumers state that they base their dining choices on menu photos.

5. Recommendations
● Adopt a regular social media platform with premium quality images, brief videos, and
engaging stories to promote ambience and menu items as 54% of diners find restaurants
online through social media.
● Active response to Google and aggregator reviews, with which the feedback can be raised
by 35% (Widewail, 2025).
● Implement loyalty programs using CRM such as birthday discounts and referral offers so
that people will become frequent customers (Bojkov, 2022).
● Highlighting staff training to reduce the fluctuations in the services and improve the
perceived service quality.

6. Conclusion

Hit and Run restaurants are in a booming market, the foodservice industry in India is a booming
market that is expected to become even bigger in 2025, the industry is estimated to be more than
USD 114 billion and even higher. Hit and Run needs to exploit digital platforms to be
competitive, improve service delivery consistency, and customer interaction in line with the
changing trends in customer behaviour.
