Haryana

Haryana is a state in the northern part of


India. It was formed on 1 November 1966. The
capital of Haryana is
Chandigarh.
Haryana is known as
the
“land of farmers”
because
most of the people
depend
on agriculture. The
state is
famous for wheat, rice,
milk and traditional village life. Haryana is
also important in Indian history because
many ancient events took place here,
especially in Kurukshetra.

potato. This dish
is very popular in

it is healthy,
filling and keeps
the body warm
during winter. It is usually served with fresh
white butter (makhan), curd, pickle and
onion.
Ingredients:-

• 1 cup bajra flour


• 1 boiled potato (mashed)
• 1 small onion (finely chopped – optional)
• 1 green chilli (finely chopped)
• Salt (as per taste)
• Fresh coriander leaves (optional)Water
(little if needed)
• Ghee or butter for cooking
• Fresh white butter (makhan) for serving
Method of Preparation:-

• Take bajra flour in a bowl.


• Add mashed potato, salt, green chilli and
onion.
• Mix all the ingredients well.
• Add a little water and make a soft dough.
• Make a small ball from the dough and
press it gently to make a round roti.
• Heat a tawa and cook the roti on medium
flame.
• Apply a little ghee or butter and cook both
sides until golden brown.
• Serve hot with fresh makhan, curd, pickle
and onion.

Haryana and Rajasthan. Kachri is a small

vegetable

areas. It is
mostly
used in
villages
and is very
popular in
summer.
This sabzi is simple, tasty and healthy, and it
is usually eaten with bajra roti or chapati
Ingredients:-

• 1 cup kachri (cut into small pieces)


• 1 small onion (finely chopped)
• 1 green chilli (finely chopped)
• ½ teaspoon turmeric powder
• ½ teaspoon red chilli powder
• Salt (as per taste)
• 1 teaspoon oil or ghee
• Fresh coriander leaves (optional)
• Little water (if needed)
Method of Preparation:-

• Wash the kachri properly and cut it into


small pieces.
• Heat oil or ghee in a pan.
• Add chopped onion and green chilli and
cook for 1–2 minutes.
• Add kachri pieces and mix well.
• Add turmeric powder, red chilli powder
and salt.
• Cook on low flame for 5–7 minutes.
• Add a little water if needed and cook until
soft.
• Garnish with coriander leaves and serve
hot.

• It helps in digestion.
• It is low in fat and light food.

3. Kadhi Pakoda

Kadhi Pakoda is a very popular traditional


dish of
Haryana. It
is made
from curd
(dahi) and
besan
(gram
flour). Soft
pakodas
are added
to the
kadhi, which makes the dish very tasty. It
is usually eaten with rice or roti and is
common in both villages and cities.
Ingredients:-

1 cup curd (dahi)


2 tablespoons besan (gram flour)
1/2 teaspoon turmeric powder
Salt (as per taste)
2 cups water
For Pakoda
1/2 cup besan
1 small onion (finely chopped)
1 green chilli (finely chopped)
Salt (as per taste)
Little water for batter
For Tempering
1 teaspoon oil or ghee
Mustard seeds
Cumin seeds
Dry red chilli
Method of Preparation:-

Step 1:- Prepare the Kadhi


Take curd in a bowl and mix it well.
Add besan, turmeric powder and salt.
Add water and mix properly so that no
lumps remain.
Cook the mixture on medium flame and
keep stirring.

Step 2:- Make Pakoda


Take besan in a bowl.
Add onion, green chilli and salt.
Add little water and make a thick batter.
Fry small pakodas in hot oil until golden
brown.
Step 3:- Final Preparation
• Add the pakodas to the kadhi.
Heat oil or ghee in a pan for
tempering.
• Add mustard seeds, cumin seeds and
dry red chilli.
• Pour this tempering into the kadhi.
Cook for 5 minutes and serve hot.

Nutritional Value:-

• Kadhi Pakoda is tasty and nutritious.


Curd is rich in calcium and good for
digestion.
• Besan provides protein.
It gives energy and keeps the body
healthy.

4. Bajra Khichdi

Bajra Khichdi is a traditional and


healthy dish of Haryana. It is mainly
made in winter because bajra keeps
the body
warm.
This dish

and is
usually
eaten
with
ghee,
curd and pickle. It is simple,
nutritious and easy to digest.
Ingredient:-

• 1 cup bajra (pearl millet)


• ½ cup moong dal (yellow lentil)
• 1 tablespoon ghee
• ½ teaspoon turmeric powder
• Salt (as per taste)
• 3–4 cups water
• 1 small onion (optional)
• 1 green chilli (optional)
Method of Preparation:-

Wash bajra and moong dal properly.


Soak the bajra for 3–4 hours.
Take a pressure cooker and add bajra
and moong dal.
Add water, salt and turmeric powder.
Cook for 3–4 whistles until soft.
Heat ghee in a pan and add onion and
green chilli (optional).
Add this to the khichdi and mix well.
Serve hot with ghee, curd and pickle.

Bajra Khichdi is very healthy and


nutritious.
Bajra is rich in fibre and iron.
Moong dal provides protein.
It helps in digestion.
It keeps the body warm in winter.

5. Singri ki Sabzi

Singri ki Sabzi is a traditional dish of Haryana


and Rajasthan. Singri (also called Sangri) is a
dry vegetable that grows in desert and dry
areas. It is very
popular in
villages and is
usually cooked
with simple
spices.
This sabzi is
healthy, tasty and is commonly eaten with
bajra roti or chapati.
Ingredients:-

• 1 cup dried singri (sangri)


• 1 small onion (finely chopped)
• 1 green chilli (finely chopped)
• 1/2 teaspoon turmeric powder
• 1/2 teaspoon red chilli powder
• Salt (as per taste)
• 1 teaspoon oil or ghee
• Fresh coriander leaves (optional)
• Little water (if needed)
Method of Preparation:-

• Wash the dried singri properly.


Soak it in water for 4–5 hours.
Heat oil or ghee in a pan.
• Add onion and green chilli and cook
for 1–2 minutes.
• Add the soaked singri and mix well.
• Add turmeric powder, red chilli
powder and salt.
• Cook on low flame for 7–10 minutes.
• Garnish with coriander leaves and
serve hot.

Singri ki Sabzi is very healthy and light food.

6.🫓 Besan Masala Roti

Besan Masala Roti is a traditional and simple

also easy
to prepare
and is commonly made at home.
Ingredients:-
• 1 cup besan (gram flour)
• 1/2 cup wheat flour (optional for soft roti)
• 1 small onion (finely chopped)
• 1 green chilli (finely chopped)
• Salt (as per taste)
• 1/2 teaspoon red chilli powder
• 1/2 teaspoon turmeric powder
• Fresh coriander leaves (optional) Water
(as needed)
• Ghee or butter for cooking
Method of Preparation:-

• Take besan in a bowl.


• Add wheat flour (optional), onion,green
chilli, salt and spices.
• Mix all the ingredients well.
• Add water and make a soft dough.
• Make a small ball from the dough and roll
it into a round roti.
• Heat a tawa and cook the roti on medium
flame.
• Apply ghee or butter and cook both sides
until golden brown.
• Serve hot with curd, butter or pickle.

7. Bathua Raita

Ingredients:-
• 1 cup bathua leaves
• 1 cup curd (dahi)
• 1 green chilli (finely chopped)
• Salt (as per taste)
• ½ teaspoon roasted cumin powder
• Little water (if needed)
• Fresh coriander leaves (optional)

Method of Preparation:-
Wash the bathua leaves properly.
Boil the leaves for 4–5 minutes.
Drain the water and grind the leaves lightly.
Take curd in a bowl and mix it well.
Add the bathua paste to the curd.
Add salt and roasted cumin powder.
Mix everything properly.
Serve fresh and cool.

• Salt (as per taste)
• 1 teaspoon oil or ghee
• Little water (if needed)
Method of Preparation:-

• Wash the green chana properly.


• Heat oil or ghee in a pan.
• Add chopped onion and green chilli and
cook for 1–2 minutes.
• Add green chana and mix well.
• Add turmeric powder and salt.
• Cook on low flame for 5–7 minutes.
• Add chopped coriander leaves and mix
well.
• Serve hot with roti or paratha.

Sweet Delights (Desserts)

1. Churma

Churma is a traditional sweet dish of


Haryana. It is made from wheat flour, ghee
and sugar
or jaggery.

made

festivals
and special occasions. Churma is healthy,
tasty and gives energy.
Ingredients:-
• 1 cup wheat flour
• 3–4 tablespoons ghee
• 1/2 cup sugar or jaggery (powdered)
• 4–5 almonds (optional)
• 4–5 cashew nuts (optional)
• Little water (for dough)

Method of Preparation:-
• Take wheat flour in a bowl.
• Add 1–2 tablespoons ghee and mix well.
• Add water and make a hard dough.
• Make small thick rotis and cook them on
a tawa.
• Crush the rotis into small pieces.
• Add powdered sugar or jaggery and mix
well.
• Add ghee and dry fruits.
• Mix properly and serve.
Nutritional Value:-

Churma is very nutritious and gives energy.


Wheat flour provides carbohydrates.
Ghee gives strength and energy.
Jaggery provides iron.

2. Malpua
Malpua is a traditional sweet dish of Haryana
and North India. It is made from flour, milk

rabri or milk.

Ingredients:-
• 1 cup
wheat
flour (or
maida)
• 1/2 cup
milk
• 2–3 tablespoons sugar
• 1/2 teaspoon fennel seeds (saunf)
• 1/2 teaspoon cardamom powder
• Oil or ghee for frying
Method of Preparation:-
• Take flour in a bowl.
• Add milk and sugar and mix well.
• Add fennel seeds and cardamom powder.
• Make a smooth batter.
• Heat oil or ghee in a pan.
• Pour a small amount of batter into the hot
oil.
• Fry until golden brown on both sides.
• Serve hot.

Ingredients:-
• 1 litre milk
• 1/4 cup rice
• 3–4 tablespoons sugar
• 4–5 almonds (optional)
• 4–5 cashew nuts (optional)
• 1/2 teaspoon cardamom powder
• 1 teaspoon ghee (optional)
Method of Preparation:-
• Wash the rice properly.
• Boil the milk in a pan.
• Add rice to the milk and cook on low
flame.
• Stir continuously so that the milk does
not burn.
• When the rice becomes soft, add sugar.
• Add cardamom powder and dry fruits.
• Cook for 5 more minutes.
• Serve hot or cold.

Lassi and Chaach are traditional drinks of


Haryana. They are made from curd (dahi) and
are very popular in villages. These drinks are

Lassi is usually thick and sweet, while
Chaach is thin and salty. They are mostly
used in summer to keep the body cool.
Ingredients:-
• 1 cup curd (dahi)
• 1/2 cup water
• 2 tablespoons sugar (for sweet lassi)
• 1/2 teaspoon cardamom powder
(optional)
• For Chaach
• 1 cup curd (dahi)
• 1 cup water
• Salt (as per taste)
• 1/2 teaspoon roasted cumin powder
• 1 green chilli (finely chopped – optional)
Method of Preparation:-
• Take curd in a bowl.
• Add water and sugar.
• Mix or churn well until smooth.
• Add cardamom powder (optional).
• Serve cold.
• Chaach
• Take curd in a bowl.
• Add water and mix well.
• Add salt and roasted cumin powder.
• Mix properly.

• 2–3 garlic cloves (optional)

• Little water (if needed)

Method of Preparation:-

• Wash the coriander leaves properly.


• Put coriander leaves and green chilli in a
mixer.
• Add salt and garlic (optional).
• Add little water and grind properly.
• Add lemon juice and mix well.
• Serve fresh.
