Perfect Chocolate Chip Cookies
These classic chocolate chip cookies are crispy on the edges, chewy in the middle, and
absolutely irresistible. This recipe has been perfected over generations and produces
consistently excellent results. The secret lies in the combination of both granulated and
brown sugar, which creates the ideal texture and depth of flavor.
Ingredients:
2 and 1/4 cups all-purpose flour, 1 cup unsalted butter (softened to room temperature),
3/4 cup granulated white sugar, 3/4 cup packed brown sugar, 2 large eggs at room
temperature, 2 teaspoons pure vanilla extract, 1 teaspoon baking soda, 1 teaspoon fine
sea salt, 2 cups semi-sweet chocolate chips, and optionally 1 cup chopped walnuts or
pecans for added texture and nutty flavor.
Instructions:
1. Preheat your oven to 375°F (190°C) and line baking sheets with parchment
paper or silicone baking mats to prevent sticking and ensure even baking
2. In a large mixing bowl, cream together the softened butter with both sugars using
an electric mixer on medium speed for about 3-4 minutes until the mixture is light
and fluffy
3. Beat in the eggs one at a time, ensuring each is fully incorporated before adding
the next, then mix in the vanilla extract
4. In a separate bowl, whisk together the flour, baking soda, and salt to ensure even
distribution of leavening agents
5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed just
until combined. Avoid overmixing as this can result in tough cookies
6. Fold in the chocolate chips and nuts if using, distributing them evenly throughout
the dough
7. Drop rounded tablespoons of dough onto prepared baking sheets, spacing them
about 2 inches apart to allow for spreading during baking
8. Bake for 9-11 minutes until the edges are golden brown but the centers still look
slightly underdone. They will continue cooking on the hot pan after removal
9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a
wire rack to cool completely
Tips for Success:
For chewier cookies, slightly underbake them. For crispier cookies, bake an additional
1-2 minutes. The dough can be refrigerated for up to 3 days or frozen for up to 3
months, allowing you to bake fresh cookies whenever desired.
Homemade Pizza Dough
This authentic Italian-style pizza dough recipe creates a perfectly crispy crust with a
chewy interior. The key to exceptional pizza dough is patience, allowing the yeast
sufficient time to develop complex flavors while creating the ideal texture.
Ingredients:
3 and 1/2 cups bread flour (higher protein content creates better gluten structure), 1
packet (2 and 1/4 teaspoons) active dry yeast, 2 tablespoons extra virgin olive oil, 1 and
1/2 teaspoons fine sea salt, 1 teaspoon granulated sugar, 1 and 1/4 cups warm water
(approximately 110°F or 43°C)
Instructions:
10. In a small bowl, combine the warm water, sugar, and yeast. Stir gently and let sit
for 10 minutes until the mixture becomes foamy, indicating the yeast is active
11. In a large bowl, mix the flour and salt together, creating a well in the center for
the wet ingredients
12. Pour the yeast mixture and olive oil into the flour mixture, stirring with a wooden
spoon until a shaggy dough forms
13. Turn the dough out onto a lightly floured surface and knead for 8-10 minutes until
it becomes smooth, elastic, and springs back when pressed
14. Place the dough in a lightly oiled bowl, turning once to coat all sides. Cover with
plastic wrap or a damp towel
15. Let the dough rise in a warm, draft-free location for 1 to 1.5 hours until doubled in
size
16. Punch down the dough to release air bubbles, then divide into desired portions.
Each portion makes one 12-inch pizza
17. Shape the dough by hand or with a rolling pin, add your favorite toppings, and
bake at 475°F (245°C) for 12-15 minutes until the crust is golden and the cheese
is bubbly
