Brandy

Brandy is popularly known as ‘the soul of wine’. Brandy is a spirit from freshly gatheted grapes.
The spirit distilled from any other fruits other than grapes are fruit brandies and must be named
after the fruit compined with word ‘Brandy’ eg – Cherry Brandy, Peach Brandy, Apricot Brandy.

‘These fruit brandy are classified as Eaux-de-vie’. Brandy is produced by all the countries that
produce wine. The word Brandy originate from Dutch word ‘Brandjwine’ which means Burned
wine as distillation are refered to as Burning process.

Cognac- Of all the brandys produced in the world, cognac is the most famous and prestigious.
Under the French appellation laws, the term cognac strictly refer to a spirit made from grapes
(Predomenently Ugniblanc- white grapes) grown, beneficed & distilled in cognac region.
There are 6 sub-regions in cognac region.

1) Grand Champagne
2) Peti champagne
3) Borderies
4) Fins Bois
5) Bons Bois
6) Bois Ordinairies

Manufacturing of Cognac
Cognac is distilled in the cognac region of France made from St. Emilion grapes(ugni blanc).It is
the predominant grapes used because of its high yealed.
This cognac is pot stilled twice in a traditional copper pot still. Alcoholic strength of cognac is
brought down to 40% - 45% ABV by adding distilled water. The colour is adjusted with a little
caramel. It is then filtered, rested and bottled.

The age of cognac in the cask is identified by stacks and words printed on the labels.

Armagnac is the second best brandy produced in Armagnac region in France.

Ensure the guest would like the sniffer or balloon warmed before pouring the brandy.
●​ Seasonal brandy drinkers preferred to use their hands for warm.
●​ Too warming a glass and aroma can be release quickly and brandy may spoil.
●​ Brandy is vulnerable to external flavours, hence never warm a glass over a flame of
methylate spirit.
●​ Warm the glass with hot water.
●​ Wipe and polish before pouring the brandy.

Reasons Why Brandy is serve in balloon glass?

1) A large bowl allows a glass to be wrap by the hand to warm it through and release the
bouquet.
2) The narrow neck of a balloon traps aroma in the bowl and lets the nose gain full appreciation.
