Question # 2
Yeast was grown in a well-mixed batch fermentor. Assume the working volume and the temperature
in the fermentor are constant. The growth rate is first order (r=KC (g/L-hr)) where C is yeast cell
mass concentration (g/L), t is time (hr), and K is rate constant (1/hr). The initial cell concentration
was 2.5 g/L (t=0), and the cell concentration reached 33 g/L after 25 hrs.

Develop the equation describing the yeast cell mass balance in the batch culture (Identify the
dependent variable and independent variable).
b.
Identify the initial condition.
c.
Classify the DE and identify the forcing function.
d.
Solve it and determine the rate constant K and the time required for the yeast cell mass to be
doubled (td).
e.
Based on the results of a-d, design a fermentor (size (L)) that can produce 10,000 ton yeasts
per year. The down time is 5 hrs after each batch and the maintenance time 3 weeks are required per
year. Note that the cell concentration at harvest is 30 g/L. Considering the foaming problem in the
fermentation, the working volume of the fermentor should not be over 70% of the actual fermentor
size.
