Definiie

Un sistem dispers coloidal reprezint un sistem termodinamic


heterogen obinut prin amestecarea a dou sau mai multor
componente nemiscibile.
Ciocolata,reprezint un sinstem dispers obinut prin
dispersarea unor substane
solide(zahr fin mcinat,cacao,lapte praf) n untul de
cacao.
Din sistem lipsete apa,dar sunt prezeni
emulgatori,precum esterii sorbitanului,lactil-
monogliceridele,care se adsorb pe suprafaa particulelor
solide i micoreaz frecarea fa de untul de
cacao,favoriznd formarea unei paste omogene.
Ciocolata neagr
Ciocolata neagr, numit i ciocolat amruie, este un
amestec de cacao i unt de cacao cu zahr. Ea conine
minimum 35% cacao. Necesarul de zahr depinde de
amreala varietii de cacao utilizat.
Ciocolata cu lapte
Ciocolata cu lapte conine un minim de 25% substan
uscat de cacao i 12 % substan solid de lapte
(n general lapte praf sau lapte condensat).
Ciocolata alb
Ciocolata alb este ciocolata produs din unt de cacao,
